Thick maple wood replaces the stainless steel surface on the room’s central bar, while cocktail tables loosely fill the space. The lights dim later in the evening when the space becomes more of a cocktail bar.

 

The bar features everything from homemade sodas to draught negronis. Selland explains that in contrast to his first restaurant project, “there’s effort to use ingredients but we’re not going into great detail to explain why we’re using it here. Like instead of your traditional lemon or lime juice, we’re using citric acid, lactart (another form of acid) that still gives you that pucker but allows us to play with the preconceptions of what people think a cocktail should look like.”

Red sauce, mozzarella Daiya cheese, black olives, sundried tomatoes and Smart Pepperoni on a cornmeal crust.

 

Recipe: Crispy, Crunchy, Somewhat Buttery (& Totally Vegan!) Cornmeal Pizza Crust.

With not one but two mock meats (tofurky kielbasa and a mock chicken).

Yup, that's hand-crushed wheat Ritz crackers on top.

This fresh pasta shop is located in a section of the Bronx called Aurther Avenue. It is an old time Italian part of the Bronx that still provides lots of old fashioned goodies. As the Christams season draws near tour bus with loads of eager foodies arrive in the area to gather up the specialty foods.

 

For the regulars, like myself, who come weekly or monthly for our supplies of cured hams, pasta, fresh cheese and great vegetables we have to get to these shops very early to avoid standing in the lines outside the stores.

Ok.....the twirling came from me not an app! Yup! Twirled each and very one of those noodles around that fork using the arm that had surgery on my shoulder. It can only get better from here. Used my camera for half a dozen shots yesterday too. Look out 2013!!!

Red Sauce was inspired by the Italian American restaurants found in New York (especially Rao’s) and Chicago in the 1950s. Scott had actually fallen for name around the time he came up with Acadia; and the concept has been in the works since. The couple had considered looking for a second space but saw the opportunity to make a change at the end of last year closing Acadia to relaunch to this casual concept.

i am going to remove some in the next week or so, as i think none are in the league of this one!

I love my linguini with a red clams sauce.

Fender and Meatballs- check large version - these were really good made with milk soaked crumbs, single grind beef, P/R cheese and fresh green stuff.

Popcorn Float ($9) aged rum, caramelized popcorn ice cream, Coca Cola. The cola float gets an upgrade using caramel popcorn-infused ice cream (that’s been made in a Pacojet from the space’s Acadia days).

Rachel made a tasty linguini with red sauce and garlic bread. I'm not a fan of linguini, but it's growing on me — thanks to Rachel. I *think* this could have been my first time eating it.

Definitely will return to this hidden place on Kapahulu St.. I don't like marinara but this combination was fantastic!!! I have a place for tomatoe sauces in my gut now

Homemade dough (just a little sweet)

I cover with a little olive oil before baking

Meat (ground chuck and / or sausage)

Low fat Mozz cheese

1 egg or egg white (I use organic eggs)

Garlic and Italian seasonings

( I rarely use salt in anything )

 

I have organic flour, wheat I think I'll try, on my list to purchase this week
