Fried Chicken Thighs simmered in a red sauce

 

Chicken thighs - dredged in seasoned flour and fried to golden brown

 

Red Sauce - one large can crushed tomatoes, one onion chopped, 6 cloves garlic chopped, a few shakes of dried oregano, about a dozen leaves of fresh basil, some lemon juice and salt and pepper

 

When golden and pretty much done, place chicken in the sauce and simmer for a minimum of 1 1/2 hours, low heat with cover on, stir occasionally.

Melt in your mouth chicken

 

Note: Edamame pasta on side above (high fiber, low carb alternative to pasta)

So lifelike's the McNugget, I reflexively jumped out of the way of the splashing sauce seeming to come @ me.

 

Except everybody knows glassware hasn't got anything to do with the experience of McDonalds — the ingestion etc. But McNuggets flung from people's mouths and hands and making messes when they land places, that's 100% accurate to all of my McDonald's memories. "Here's your serving suggestion!" etc.

 

It kind of seems like a waste of all the "mechanical separation" work that went into the production of the McNuggets!

Fresh ingredients so I can fill the bellies of my loved ones (can't live without them either) and my camera to capture it all. I'm constantly amazed at how sexy the food is.

 

Today, I am making a red sauce with meat that will simmer all day. House smells good.

Patsy’s Italian Restaurant in the Theater District of NYC has been in business since 1944 and is owned and operated by the 3rd generation of the Scognamillo family. This iconic red sauce spot 🍝was Frank Sinatra’s favorite restaurant and he often dined there after recording at his nearby studio. Gino’s aka Gino of Capri Restaurant on the Upper East Side of Manhattan was founded in 1945 by Gino Circiello and had many famous patrons including Ed Sullivan and Frank Sinatra. Gino's specialized in moderately priced Italian food 🍝 and was known for its tomato-red wallpaper printed with 314 leaping zebras. Gino passed away in 2001 at age 89 and his long-time waiter, Salvatore Doria, took ownership of the restaurant along with the chef, Michele Miele. Sadly, Gino’s was forced to close in 2010 when their rent was increased by $8,000 a month to over $30,000 a month and health-care costs of their employees also increased. A cupcake cafe (Sprinkles Cupcakes) took its place.

INGREDIENTS:

 

1 tablespoon olive oil

1 medium onion, chopped (1/2 cup)

4 cloves garlic, finely chopped

1 can (28 oz) Muir Glen® organic whole peeled tomatoes, undrained, cut up

1/4 cup chopped fresh basil leaves

3 cups uncooked rigatoni, penne or ziti pasta (8 oz)

8 oz fresh mozzarella cheese, cut into 1/2-inch cubes

1/4 cup pine nuts, toasted

 

DIRECTIONS:

 

1. In 12-inch skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is crisp-tender. Stir in tomatoes. Heat to boiling. Reduce heat; simmer uncovered 20 to 25 minutes, stirring occasionally, until thickened. Stir in basil.

 

2. Meanwhile, cook and drain pasta as directed on box.

 

3. Stir pasta into sauce. Cook until thoroughly heated. Into large serving bowl, pour pasta and sauce. Gently stir in cheese and pine nuts.

Even though Christmas Day has passed, did you know that Italians traditionally decorate their Christmas trees 🎄 on December 8th (the feast of the Immaculate Conception) but that the tree stays up until the epiphany on January 6th. Italians 🇮🇹 also typically have a big Christmas Eve meal of different fish dishes known as the Feast of the Seven Fishes. To continue our celebration of Italian Christmas, we are highlighting Monte's Trattoria in Greenwich Village which has been in business since 1918. It has been owned by chef Pietro Mosconi and his family since 1983. The overhanging neon ‪sign‬ is from the 1950s. Pietro told us that when he purchased the ‪Italian‬ ‪restaurant‬ from the original owner he decided to keep the name and ‪#signage‬ because he was so fond of it. We love this ‪vintage‬ sign too, especially the chef holding a steaming bowl of ‪pasta‬. The name "Monte" was shortened from Monteverde, a city in ‪Italy‬ known as the "green mountain". Photo of entire restaurant and full interview with Pietro Mosconi appear in our book "New York Nights".

Rocco Restaurant was founded on Thompson Street in Greenwich Village by Rocco Stanziano in 1922. This old-school Italian 🇮🇹 restaurant was known as a mob joint and also attracted a celebrity clientele over the years including Marilyn Monroe &Joe DiMaggio, Johnny Depp and Robert De Niro. Mario Batali also worked at the restaurant as a chef. Sadly, this family-owned restaurant was forced to close in 2012 after its landlord raised its rent from $8,000 a month to $18,000 a month. The storefront was taken over by Carbone, an Italian-American restaurant in 2013 owned by Mario Carbone, Rich Torrisi and partner Jeff Zalaznick who remodeled the interior but left the remnants of original neon signage from Rocco’s and added in neon the words “Carbone and “Wines Liquors” (swipe left for 2nd photo).

Let us know if you have eaten at Carbone (we have not but did dine at Rocco’s) as it is expensive and notoriously difficult to get a reservation.
