recipe from Dave, of Dave's Killer Bread. pretty darn good bread! the dough is nice and soft, great to work with. He has you make a sponge first, then finish the dough. Don't know why i hadn't thought of it, since i sometimes do it when making artisanal style breads with white flour. Still not fluffy enough for hubby, but i think it's got the texture i was looking for

Recipe makes 2 loaves, so 1 will go in the freezer

Homemade broth is rich in calcium, magnesium, phosphorus, sulphur, silicon and other trace minerals in a form that is easily absorbed by the body. Fish stocks contains iodine and thyroid strengthening substances. Your stock will be even more healthful if you add a little acid to the water as this helps extract the minerals from the bones, apple cider vinegar or whey is what we use. Homemade broths also contain glucosamine and chondroiton – which are thought to help mitigate the effects of arthritis and joint pain. It also contain collagen and gelatin which help nourish you skin, joints, tendons and other connective tissues (which means fewer wrinkles, cellulite, arthritis, tendonitis, etc). Why shell out big bucks for wrinkle cream, joint supplements, cellulite cream and vitamin pills when you can simply include bone broths in your diet?

I picked out 4 desserts and then noticed the NY Cheesecake..I didn't get to eat any when I was in the states earlier this year so I asked if he could put back the lemon cheesecake...but he was real nice -- he let me keep both =) I'm glad he did because WOW the lemon cheesecake was to die for! the NY cheesecake was a little dry. Everything else was pretty good..but as always the berry dessert is always too sour for my taste...I let Mike ate it all.
