Here's a picture of my modern Dodge-brand chuckwagon. The chuckbox is great for camping as all my culinary gear is kept in one location. When I cook for a group or go camping, everything is there, ready for packing.

Cooking rocking stove made from old water heater tank. Has a stainless steel inner ring in the fire chamber. Small sticks are fed into the bottom feed tube...the ends ignite/burn in the combustion chamber. Creates a very efficient hot fire.
Thought we'd roast the chicken over a wood fire instead of the grill tonight. I had some hickory nut hulls that we soaked in water and added to the fire to add a little hickory smoke. After roasting we brought it in, smothered it with homemade BBQ sauce and I baked it for a few more minutes. Then it was shredded and enjoyed on a freshly bake sourdough bread with homemade mozzarella cheese oozing out the sides - MMMMM.

I hosted dinner Wednesday, March 14, 2012, at the Christian Chefs International annual conference. The meal was prepared in four 14-inch Dutch ovens and one 17-inch skillet. Fitting for the rustic meal, we served it on the fireplace hearth in the main dining room of Canby Grove Camp, Oregon.
The menu featured:
Pozole verde
Grilled chicken marinated in guajillo sauce
Mexican rice pilaf
Sauteed green beans with garlic
Spring salad with balsamic vinaigrette
Avocado yogurt sauce
Salsa ranchera de arbol
Dutch oven bread
Oregon mixed berry cobbler

We had great fun last night cooking on a real fire in the garden. Was a lovely way to spend one of the last lighter evenings of the year.
We celebrated Mother's Day a day early because of everyone's schedules. I must admit that for his first crawfish boil, my stepson did a fabulous job with the cooking!!!!
There's just no keeping the flies away from a crawfish boil....fans help, but they are mighty persistent when there are mounds of crawfish on the table!!
