Located in northern Finland, the Korouoma Nature Reserve is an impressive area known for its deep gorge, steep rock walls and beautiful waterfalls. A hike to Korouoma in the snow is an enchanting experience that takes you deep into the winter wilderness of Lapland. During the winter months, Korouoma transforms into a fairytale landscape covered in a thick layer of snow, making it an idyllic destination for adventurous hikers and nature lovers. One of the highlights of the walk to Korouoma is the Koronjää. A beautiful circular walk of about 12 km along an impressive ice wall that is created by the freezing of water that seeps from the rock walls. This ice wall can reach enormous dimensions and is a spectacular sight, especially in winter. As you walk through the snow-covered paths of Korouoma, you will be surrounded by serene silence and breathtaking views of snow-capped trees, frozen waterfalls and glittering ice formations. On Saturday we went launching rockets at the Snow Ranch in the California Central Valley. It is a huge ranch with 3000 acres / 1200 hectares. Snow Ranch, operated by the Orvis Cattle Company, has a long history.

 

200+ people participated in the rocket launch. I invited a friend of mine from Spain to cook paella for the rocket enthusiasts. It was a perfect day enjoying yummy paella and launching rockets with no wind! Here is the finished paella after 2 hours cooking. Enough to eat for 70 people. Thank you chef JJ of ArtOfPaella!

UDPATE 2016-01-19:

 

RIP JJ Juan, you will be dearly missed. My thoughts are with Susana and family.

 

I had the privilege to get to know JJ and was immediately drawn to his personality. Always positive, always helpful. His passion was to help people make their dreams a reality, whatever they were.

 

Last January I invited him to cook paella at the LUNAR Snow Ranch rocket event. He immediately jumped on it - rocket meets paella, two seemingly incompatible cultures. He crossed boundaries, not just on a cultural level.

 

10 days after cooking paella at the rocket launch site, chef JJ was diagnosed with Acute Myeloid Leukemia, commonly known as "blood cancer". As a true leader, he took this challenge as an opportunity, and started his "Reflections from Paradise" blog and a "Walk with me" community to raise awareness and money for this type of cancer.

 

The world would be a much better place if more people would be as passionate and caring as you JJ. Hugs! We miss you!

If we visit Sprouts and they have wild caught reds, it's our next meal. A little chilly grilling at 31 degrees, but the Weber Genesis has no problems coming to temp in cold weather.

A giant, knee-roasting BBQ at the Adelaide Fringe Festival in The Garden of Unearthly Delights. How the chef didn't singe his knees I'll never know, the heat from this contraption was palpable, even at photographic distances. Seems they specialise in pork - it was called 'Pigs On Fire'.

Cooking on an outdoor grid is akin to a national pastime in Mexico. This afternoon and evening we spent time with another of the lovely families at their ranch house outside of San Juan de los Lagos, Mexico. The weather was perfect to enjoy friends and a home cooked chicken stew and tortillas. This family has a beautiful covered patio-bar type cooking area. The stew is being cooked over the fire you can see. This is a lovely place. I walked around and explored the immediate area after dinner. I have several photos of this ranch to share.

 

I'm at home in Dallas now and life is getting back to normal. The bus trip was 14 1/2 hours due to our bus losing a tire on the outskirts of Nuevo Laredo, just before reading the US / Mexico border. We had left Monterrey at 4:30 am. I had left the house at 3:00 am. We had to wait on the side of the road for a replacement tire to be brought to us. Most of us on the bus were sleeping or dozing so we hardly noticed. Then we drove through the streets of Nuevo Laredo until we came to the international bridge where we had to wait in long traffic lines. It took two hours to cross the border. The hardest part is having to take everything off the bus and hand carry all your luggage and everything you have with you up a long ramp, then lift it up to the scanning machine after showing your passport or permit. I now have a new bank card, a new temporary driver's license (got a better photo made) while I wait for my replacement license, and have cancelled the credit card numbers and am waiting on replacement cards. I'm grateful to God that none of my accounts were misused from the time I lost the card wallet, probably in Downtown Monterrey, Mexico. I certainly do feel blessed that nothing happened. It was time to come home anyway so all is well. I basically use Flickr as my photo blog site to keep up with you, my good friends.

 

I'm still on my tablet and can't place my photos on the map. I did at least once, but don't remember the secret formula. San Juan de los Lagos is in Central Mexico, about an hour south of Aguascalientes.

Kazakh women in traditional attire frying baursaki (traditional fried dough) at a yurt raising ceremony in a field over a wood fire, Saty, Kazakhstan. First you dig a deep wok-sized hole in the ground and place small pieces on wood in the hole. Place the wok over the hole and light the fire. Place cooking oil in the wok and when it is hot place small pieces of yeasted dough in the oil and fry until golden brown. Eat and enjoy with tea from the Russian samovar in the foreground!

Sliced Cajun sausage with green pepper, red pepper, onion and minced garlic. Saturday evening, I made an applewood smoked alfredo sauce to be used on vermicelli pasta.

 

I added cream. Parmesan cheese and a few other seasonings to this, let it slowly cook down and then added to the pasta. it turned out amazing!
