Complete with sausage/mustard, green beans, mashed potatoes/gravy and yellow cake w/chocolate icing.
I spent over an hour making this dinner, the whole while feeling pretty guilty for making such a meal. I'm gonna guess that's why more than 2/3 of it went uneaten. I wonder if I could psych myself out like that every time I eat a bad meal. Wishful thinking.
Topped with a bernaise sauce. I liked eating the string beans with the bernaise, but the rest of it wasn't that fantastic.
Tender pork tenderloin served over a bed of red pepper mashed potatoes accompanied and layered with grilled eggplant and sautéed peppers a drizzle of a soy sauce reduction and deep fried caramelized carrot strips is the finishing touch.
Slice into these at Blake's Restaurant in Puerto Vallarta.

Easy and tasty. My brisket always gets super dry as soon as I slice it, but the gravy helped.

It was about midnight or later (Georgia time) when we were enjoying a delicious meal of prime rib, mashed potatoes, and gravy, but it had been a long day. We were all happy to have arrived in Las Vegas. Day 1 was a great success!

I am beginning to think on long haul United Airlines the airline food ain't bad! This is the "beef", as opposed to the "chicken". :-) It actually tasted great, relatively speaking.
...or "cottage pie" for picky peoples. ;p
Not a perfect version but tasty considering how poorly stocked our Kuwait kitchen is.
Some of our good friends from out of town came by last night to cook and eat a pre-Thanksgiving meal. Garlic and herb mashed potatoes with vegetarian gravy, butternut squash roasted in olive oil with sage and thyme, and broiled asparagus.
Yum.

Last night we had our first snowfall. We had a total of 1-2" overnight. By morning most of it was gone.
Rock Band Night was canceled for a private party so I took advantage of the warm house to try something new. I've never made a pork tenderloin (or pork) prior to today. I made spicy pork tenderloin, mashed potatoes, and sweet corn for dinner. I'm quite happy with my results.
