Just opposite the exit to Raffles Link / Marina Square, on the wall you will see a Cast Bronze Relief Tablets, The Record 1981, by Cheung Yee. The artwork consists of 120 rectangular bronze plaques. Each plaque depicts different scenes and auspicious symbols that were prevalent in ancient Chinese cities: Fortune, Longevity, Sun, Dragon and Phoenix, Harvest and so forth. The artwork’s vertical script read from left to right resemble a page from a Chinese character text book and serves as a “Heavenly book, a recorded history of earth over time and its reader, the Universe. The Tablet signifies the coexistence between Man and the Universe in perfect harmony and eternal prosperity.

Chinese pork sausages [臘腸] stripped off their skins and julienned, lightly fried in olive oil and used in this omelette. This is something I learnt from a neighbour. These sausages are also commonly used in fried rice, lo mai kai, popiah and char kway teow, a popular noodle dish in Singapore and Malaysia.
The small town of Yale, Kansas is known for fried chicken and homestyle dinners. In the 1930s this was coal mining country with high unemployment and a failing economy. Local housewives started cooking chicken dinners to sell to local customers. By the 1940s there were two such businesses, both located on the same street just a short distance from each other. For over 65 years Chicken Annie's and Chicken Mary's have peacefully co-existed, although frequent customers swear allegiance to one or the other. I have eaten at both places, although some time elapsed between those visits. My conclusion is that the chicken reminded me of the type of chicken my grandmother cooked when I was a kid. The largest difference is in the types of side dished each respective restaurant offers.
A new supermarket has opened in our town providing great convenience for us, residents here. The marked difference between this new one is the pricing of its vegetables especially, much cheaper than those already established in my neighbourhood.
Roast pork shown here was bought from there. I had it cut into slices and then pan-fried it before serving...pretty yummy.
There was a photo session in my new apartment featuring a home stylist and a firm selling design products and furniture. Hopefully there will be an article published in the leading Swedish home design magazine. They carried all these stuff up here just for taking photos and than carried it down afterwards. So nothing on the photo is mine.
YH has been suggesting cooking fish with sweet and sour hot egg sauce. Today without fish, I tried it with prawns, still it is yummy~
My wife and I joined my Dad for supper at the Staunton, VA Cracker Barrel. I had the Sunday homestyle chicken with macaroni and cheese, and baby carrots.

MeiCai [梅 菜], said to be a Hakka specialty, is a salted preserved vegetable from China. This vegetable has to be washed, cut into short lengths and then soaked. Drained and squeezed out the excess water from it before cooking. There are two types of MeiCai, the salty one and the sweet one. I used the salty type.
To cook a kg of this vegetable:
1. Lightly brown lots of chopped garlic and smashed thick slices of ginger in oil.
2. Add in 400g of sliced streaky pork or shoulder butt and stir-fried till the aroma rises.
3. Add in the drained vegetable, stir-fry well. Add in both dark and light soya sauces, a little sugar and ajinomoto to taste.
4. Add in enough of water to cover and simmer the contents till they are tender.
