MeiCai [梅 菜], said to be a Hakka specialty, is a salted preserved vegetable from China. This vegetable has to be washed, cut into short lengths and then soaked. Drained and squeezed out the excess water from it before cooking. There are two types of MeiCai, the salty one and the sweet one. I used the salty type.
To cook a kg of this vegetable:
1. Lightly brown lots of chopped garlic and smashed thick slices of ginger in oil.
2. Add in 400g of sliced streaky pork or shoulder butt and stir-fried till the aroma rises.
3. Add in the drained vegetable, stir-fry well. Add in both dark and light soya sauces, a little sugar and ajinomoto to taste.
4. Add in enough of water to cover and simmer the contents till they are tender.

Rika had left some whipped cream in the fridge after making a birthday fresh cream cake. And that made me recalled the special coffee I had once drank years ago. So I made two cups, one for YH. This is a pretty nice drink flavoured with Dom and yet the taste of cream was not overwhelming~

A homestyle classic. Instead of dumpling wrappers beaten egg is fried, filled with pork, sealed, then dropped as dumplings in bean vermicelli soup with preserved mustard and fried tofu pockets. Full of simple savoury flavours that are picked up by the slippery noodles. This is my childhood comfort food. Reminds me of my mom and grandmother. :) This version was a little heavy with the rice vermicelli and too light on the broth.
A dear one had asked for this on Saturday but only got to eat it on Sunday. I was too busy and a little tired on Saturday and forgot to thaw the bird.
While I enjoy the soupy chicken curry when eating out, somehow I am just so accustomed to cooking the dry type. Today, ER remarked that my curry has lost the simplicity that he is familiar with. For this, the taste is more intense because I have added in whole spices and lots of curry leaves. And he likes to see the layer of oil floating on top of the curry gravy. This is contradictory to my aim of reducing the amount of oil used. Anyway, I gave him a solution. That is to steam the ready cooked curry for 20 minutes to get the layer of oil.
This place was crowded during our visit on Monday...so often people have to wait to get seated.
Eating out at foodcourts has become a lifestyle of Singaporeans. Most often these eateries are not only located at shopping malls but, in housing estates too and the number is increasing. These are pretty comfy areas though most food items are the same. Still, I am glad that there are three such foodcourts within walking distance from my home.

Delicious food is available at various hawker centres, foodcourts and kopitiams that are uniquely Singapore! They are located conveniently all over the island and provide a wide range of food from the different races in Singapore.
This bowl of homemade fish and meat balls were cooked with long cabbage in soup. Fishballs especially, never seem to get tired of it~ I have decided to beat up two kilo of fish each time when I spend time to do it and yes, eats to our hearts are contended. From fish paste which is a versatile ingredient in my cooking, I could whip up many dishes. I used it in my “niang tofu”, stuffed eggs, stuffed mushrooms, chilli fish cakes, meat patties, etc. Moreover, it keeps well and fresh in the chiller compartment~

This is my little reindeer to welcome friends and family on our front door this Christmas. I made him a red rose and appliqued it rather than paint it on.

Drinking rose bud tea is said to be good for the heart, de-stress and beautify the skin. One or two teaspoons of rose buds will make a flavourful, fragrant and caffeine free tea. Do not discard rose buds after one infusion; continue to use them for a second and third time. Sweetened with honey or sugar if preferred.
