It's always so hard to resist overloading a homemade pizza with toppings even if you know you'll pay the price with a less-than-optimal crust. This one was groaning under the weight of way too much stuff - broccoli rabe, garlic cloves, pine nuts, fennel sausage and peppers.

I used my Magic-stick Hand Blender to puree a can of whole tomatoes and added Greek yogurt. I cooked a crushed Dundicuts pepper, onions and tri-colored bell pepper in that sauce. I added curry, turmeric, salt, white pepper, paprika and a few other of my favorite spices. I added cubed extra firm tofu. In a separate pot I cooked Lentils until they were almost done and then added them to the sauce and simmered them for about 20 minutes more. The rice is Tasty Bite Tandoori Rice, which I microwaved and put a little on top of the lentils and tofu.

 

It was pretty good but next time I will add more peppers, it was a low heat level on this pot.

I felt like cooking tonight: Beef, red peppers, green peppers, yellow peppers, red onion, garlic, green beans, pigeon peas, saffron, red curry, ginger, turmeric, cumin, sea salt, black pepper, long grain white rice and garam masala. A little spicy but not too hot.

I cooked up some shrimp and scallops with red onions, red cabbage, bell peppers, squash, celery, carrots, bean sprouts, red curry, turmeric, white pepper, mushrooms, vegetable soup stock, rice vinegar, garlic powder, cayenne pepper and crushed red peppers.

I cooked a chicken breast with stewed tomatoes, diced tomatoes, smoked red peppers, onions and diced chilies and several spices in the slow cooker.

 

I know, I eat a lot of chicken but I got my total cholestrol down from 331 to 85.

I started with one part cream of celery soup to two parts cream of mushroom. I added diced potatoes, carrots, broccoli, more mushrooms, garlic, a dash of hot sauce and cayenne pepper powder, old bay seasoning, salt, black pepper, cheddar cheese, parmesan cheese, hot paprika (just a little), turmeric, heavy cream and butter, clams, oysters, bay scallops, blue hake fish and tilapia (white fish).

I like to make up recipes as I go. A guy at work gave me an egg plant, some peppers and summer squash. So I decided to try something new. I got out my mandolin and thin sliced half the egg plant (the whole thing would have been too much), a jalapeno, a hot banana pepper, the squash, and half a red onion. I layered them with chunky pasta sauce (big chunks of tomato and carrots), a mixture of ricotta cheese (mixed with garlic, brown eggs, bread crumbs, coriander flakes, black pepper and oregano flakes), mushrooms, mild cheddar, sharp cheddar, provolone, mozzarella, Parmesan, and Romano cheeses. I lightly salted it and it is now in the oven, baking slowly for about 90 minutes to make sure the vegetables are cooked.

To make this I used 6 ounces of chicken, 8 ounces of mixed vegetables (onions, peas, chick peas, kidney beans, carrots, red - yellow- green peppers, celery) hot pepper flacks, cayenne pepper, coriander flakes, cumin, turmeric, smoked paprika, Jamaican season, Garam Masala, white pepper, olive oil, chicken soup stock,ginger, minced garlic and 1/ cup of white rice. the entire dish had 13 weight watcher's points - but I split it to two meals and counted each as 7 points.

I made this cheesecake for my office tomorrow - it is a New York Style Cheesecake recipe I modified - I added 1/4 of a cup less sugar because of the chopped up heath bars I added.

 

My co-workers are my Guinea Pigs for my new recipes.

I used pinto bean, skinless/boneless chicken breast and thighs, diced onion, garlic, red peppers, green peppers, green chilies and tomatoes, one ounce of jumbo macaroni pasta and chili seasonings and a little olive oil. For Weight Watcher's Points Plus it is 33 points for the entire pot. I split it into four meals - refrigerated three of them for another day.

I used some Progresso Pot Roast Veggie soup, added a couple of pices, a sliced sweet Italian turkey sausage, cheddar cheese, cauliflower and 4-cheese tortolini. For weight watcher's the entire bowl was 10 points.

For dinner tonight I made to medium rare burgers, with sweet onions, Swiss cheese and Habanero Ketchup

I had a piece of beef so I cut it up and cooked it with diced tomatoes,cilantro, black beans, garlic, onions and several of my favorite spices.

Since December 24, 2010 I have lost 60 pounds (27.2 kg), so I made a special dinner: I stir fried mussels, squid, scallops, shrimp in peppers and onion, with curry and Indian Spices, served over white rice. The entire meal was only 13 points on Weigh Watcher's Points Plus system.

The Magazine Bon Apetit recently featured a bread that takes 4 days to prepare and then bake. Very robust and with an equally robust crust. I thought it was as good as any I have ever had. The household baker, however, thought it was a bit too much of a chore.

I've only just learned about ricotta cheese. How sad, I'm 38 years old. I'm newly in love, especially with the fact that it takes so little to make a dish creamy and delicious as opposed to traditional alfredo ingredients.

 

At a friend's BBQ- on the grilil are asparagus and enoki wrapped in bacon, beef (porterhouse and rib eye cuts) and lamb chops. Absolutely yum.

this came out quite good but i am horrible at recalling how i cooked something

 

3/4 lb fresh calamari, cleaned & sliced

1 orange, 1/2 juiced, 1/2 chopped

1 lemon, juiced

zest from 1/2 of the orange

a nice big handful of fresh basil

5 bay leaves

good olive oil

pinch of sea salt

pinch of pepper

1 clove of garlic, sliced

splash of white wine

2 cups of water

 

throw into a pot: water, half the zests, the juiced lemon, 1/2 of the basil, the bay leaves, 1/2 the garlic, white wine

bring to boil

 

balance a collinder over the pot and throw the calamari in, you will be slowly steaming it over this mixture. stir the calamari gently and cover for a minute at a time for the steam to penetrate, and repeat. the calamari is done when it turns a nice consistant opaque white and starts curling in on itself.

 

take it off of the steaming pot and toss it into a bowl, its not necessary to shake the moisture out (in fact, don't).

 

to this add: orange juice, orange zest, chopped orange, other 1/2 of the garlic, salt & pepper, other 1/2 the basil and a healthy coating of the good olive oil.

mix and allow to cool in the fridge for 10-15 minutes or so.

 

serve chilled but not cold.

All dressed pizza. The way it should be :)

I made stir fried chicken (white meat), soy sauce, sriracha, a little honey to cut the heat, fresh garlic, onion, bell pepper, salt, black pepper, red curry, paprika, turmeric, cumin, white rice, extra virgin olive oil, a touch of lemon juice and Balsamic vinegar.

Used a wider pan. Should probably switch to a narrow and taller one.

I stir fried red pepper, green peppers, chili piquin, green chili, garlic, chili powder, yellow onion, white onions, mushrooms, and Goya red kidney beans; next I then added crushed tomatoes and tomato paste. I used two chili piquins - for tiny dried chilies the size of a raisins, they pack a punch ( en.wikipedia.org/wiki/Pequin_pepper ). I grew these one years, still have a few dozen frozen (Freeze Dried). They added plenty of heat. I made enough to put 3/4 of it away for another day.

For a pig-roast I am going to tomorrow.

I just started grabbing thing and tossing them in the pot. Red, yellow and green peppers, onion, garlic powder, white pepper, cumin, yellow curry, peas, carrots, green beans, corn, extra firm tofu - cooking in a mixture wine and white vinegar, teriyaki sauce, soy sauce, a little water, balsamic vinegar, olive oil and 4 TienTsin Chinese peppers (removed before eating). The sauce was boiled to a reduction and was thickening and then I added all the other stuff and slow cooked until the vegetables were done. The rice is Wayne's favorite; Tasty Bite Microwave Tandoori Rice.
