Fresh tuna - I made it for dinner. As you can see in the left upper corner, Jimmy Dean was interested in what it was, Link is off to the right.
I gave some to all three of the boys, they loved it - it was the first time they had tuna.
I used red curry paste, yellow powdered curry, tumeric, a sweet red pepper, yellow onion, minced garlic, chicken soup stock, 8 ounces of diced chicken breast, a little cabbage, 1/4 cup of white rice, olive oil and balsamic vinegar. Entire bowl is 14 points on Weight Watchers.
I just call it dinner: lots of mixed vegetables, peas and beans, whole wheat pasta and cut up skinless/boneless chicken thighs.
I am going to wear rubber pants tonight so I will look like a Zeppelin in the morning.
If I had children this would be Halloween Night Dinner.
I used a combination of ground chicken and lean beef.

Experimenting in the kitchen - I made a cheesecake for a party I am attending tomorrow. It is a lemon-raspberry-dark chocolate cheesecake - now I will have to wait to see if it gets a thumb up or down. It has the juice of one lemon and the zest from the lemon. It has 6 ounces of whole (seeded) raspberries and 5 ounces of dark chocolate swirled in to it.
My first collage.......i'm so proud.......spent hours of struggling to figure out how to make one.......and offcourse it turned out to be infuriating simple .......but i kept my cool and nails en here is the result......hope you like it as much as i do ;-)

A co-worker gave me a few different chilies and a Roma tomato - I stir fried them with a few veggie and served it on Jasmine rice. I seeded the chilies first but they still had a lot of heat.
Pam made a great pizza with dough from the breadmaker recipe and a tomato sauce made with tomatos from nans greenhouse, with some pasteurised mozzarella and some pepperoni.
Fajitas without the tortillas. I sauteed the onions and peppers in vegetable stock, spices and hot sauces and added chicken - diet food doesn't have to be tasteless.
I cooked pork in soy sauce, peach-habanaro sauce and rice vinegar. I mixed in bean sprouts, red peppers, carrots, baby corn, water chestnuts, bamboo shoots and celery. A dash of turmeric and Chinese Five Spice. It was great and had just the right amount of heat for me.
I slow cooked Yukon gold potatoes, sweet onion, garlic, jalapenos, a few spices and chicken breast. The peppers were big and I cooked them whole - they were killers. I split the chicken with the boys.
Cooked this homemade bad-boy last night.
The pasta sauce was out of a jar from Lidls.
Minced beef was Tesco Value which i dry fried first to get rid of the excess fat.
I made 1.5 pints of cheese sauce which is much better than the stuff out of a jar!
The crouton yielded an explosion of flavour, the bamboo shoot gave texture.
My pumpkin soup made with kaffir lime, lemongrass, galangal, turmeric, ginger, coconut cream, masterstock and thickened with chestnut, turned out to be a cure for man flu.
I basted a chicken breast in chicken soup stock mixed with turmeric and hot sauce and served it on asparagus. Link wasa bit interested in what it was.
Chicken and Chard Soup with pasta.
•4 tbsp. olive oil.
•pinch red pepper flakes
•1 med onion. diced
•1 carrot. diced.
•1 stalk celery. diced.
•2 cloves garlic minced.
•1 bunch Swiss Chard. separate the leaves and stems. dice the stems. chop the leaves.
•1 quart chicken stock.
•½ cup tomato puree.
•1lb. boneless skinless chicken breast.
•1 cup dry “salad” pasta.
•½ tsp dry basil leaves.
Directions: Heat the olive oil in bottom of soup pot, add pepper flakes and the chicken breast. Sear the chicken thoroughly on both sides. Remove and set aside. (chop into bite sized pieces.) Add the onions, garlic and celery to the oil remaining in the pot, stir, cover and reduce heat to loosen all browned bits from the bottom of the pot. Add the carrots and chard stems. Cook until softened. Return the chopped chicken to the pot. Add the tomato puree and chicken stock. Bring to boil then simmer ten minutes. Add the chopped chard leaves. Add the basil and season to taste. Cook five minutes more. Add the pasta and cook till al dente. (eight minutes.) Remove from the heat. Soup is best if it sits for ten minutes or so after pasta is done and before serving.
I cut up a whole young chicken and cooked it up with rice, diced chilis and tomatoes, saffron, curry, rice and a couple of other spices.
So the other night, I made ratatouille from a recipe Kelly had - it turned out really good. She said "Usually eggplant is really picky, and this recipe doesn't treat it picky. It treats it rough, but it turned out great."

I was tinkering around in the kitchen and realized I had 2 1/2 packs of cream cheese left so I made this litle 6 inch diameter cheesecake for my neighbor (and Veterinarian). Sadly they are moving in January - they are staying in town but about 7 miles away. I hate to see them go.
The cheescake is layered peanut butter and chocolate - no recipe, I made it up as I went as I cooked it.
I made the plate, also - last year.

White rice cooked with chilies and Pinto beans (with red, green, yellow peppers, garlic, onion, tomato sauce, sea salt, black pepper, paprika and Chili 3000).
I made some Turkey Chili. I used fresh diced tomatoes, canned stewed and diced tomatoes, green chilies, dark red kidney beans, 4 sliced fresh hot banana peppers (seeds included), a sweet onion, tomato sauce and paste, and a few of my favorite spices.
It was very spice-hot. Too hot for the dogs to try and I don't think any of my friends could eat it, but I love spicy-hot food. I broke out in a sweat while eating it.
Polenta is so fiddly. It's been a while since I've made it, so I turned to the Joy of Cooking and wanted to scream when I saw the words "double boiler" in the instructions. Still, it turned out nice and creamy with a hint of "cheesy" taste from several handfuls of nutritional yeast (didn't have any good cheese on hand).
First I cooked onions (green, yellow and red), mushrooms, carrots, green-red-yellow & orange bell peppers, green chilies, green peas and jalapeno peppers. Next I added crushed and diced tomatoes. Then I added pinto, black and cannellini beans. I spiced it up with a few of my favorite spices. Simmered it for and hour and let it sit for fifteen minute. It was great. I made enough to split in to five meals. For weight watchers, the entire pot is only 34 points on the points plus system.
