From the Dos Caminos cookery book I madehome made salsa, guacamole, poblano rice and camarones al ajillo. All worked out very well!
spicy beef soup - it is actually tangy too because I had added in (fresh) lime juice as instructed by the recipe. yummy, quite like a vietnamese beef soup. this consomme is much simpler to make than it seems, you don't even need to strain the soup and if you like your onions, my advice is not to chop them finely but to slice them and then leave them in the soup rather than to discard the onion mixture.
I was surprised at how easy this was to make - no fuss baking with a few basic ingredients... and very moreish!
Chicken braised in orange sauce, tossed with leftover quinoa-millet salad with grilled veggies, tangerines, pistachios, and feta crumbles.
