The black bristles grow right into the layer of fat (which looks just like blubber) but the skin is very soft.
A prime joint of meat from a local producer. Outstanding flavours!
BTW, the toxic green is a sage and mustard powder rub made with home-grown sage (lol)
This was our Christmas gift to friends in 2007. It included some granola, irish brown bread, bumbleberry jam, my pancake mix, russian breakfast sausage patties, real maple syrup, and recipes for everything included. As my friend Chelloe said, "You did not just give us fish--but you taught us to fish"--or make granola as the case may be.
Pandan is a light-green-colored flavoring widely used in Southeast Asian desserts, and in ice cream. it s made from pandanus leaves.
I still need to tweak the ingredients for this one. My brother and I used a cookbook for the basis but that recipe was a bit plain. This was technically my first duck. We didn't get the skin dry enough. If duck wasn't so pricey I'd get a few more and perfect the recipe.
I used my Kitchen-Aid and ground a chicken breast, a round steak, 3 jalapeno peppers, and a black beauty egg plant all together. I cooked this with a chopped white onion, 4 cloves of garlic, and 3 diced fresh tomatoes - I added a jar of pasta sauce with basil and salt. I added two types of cheese and a pound of macaroni.
The hot pepper just warmed it a bit, not really hot - just tasty.
It was great.

Opted for an easy lunch at home, cooked some noodles and poured some cooked spare ribs over it, and topped with fresh scallions/spring onions.
The spare ribs is cooked with equal amounts of sugar and vinegar, with a generous dash of soy sauce for colour & taste. It is them simmered until the water is significantly less. My aunt's version uses cornflour towards the end for a stickier, thicker gravy.

A very simple recipe. Sauteed ground turkey, yams and green beans (I boiled them first), and yogurt.
Just pop it in a Le Creuset dish, cover it in red wine and leave it in the oven for 2 hours. Divine!
almost better than the Breslin

Sausage was a little undercooked the first time, had to cook it a little longer after the pic.
We use turkey pepperoni, but I am sure you could use whatever you prefer. Go to the Pizza Rustica set for the recipe.
I made chili tonight: Ground pork, chili powder, turmeric, salt, black pepper, paprika, sweet onion, habanero peppers, tomato paste, and diced tomatoes - topped a with four-cheese blend.
I baked this for Courtney and Buzz's birthday picnic. Made with Anchor Liberty Ale. I also (mistakenly) used shredded Parmesan (Parmigiano Reggiano, natch) instead of grated, resulting in pockets of cheesy goodness. Yay for happy accidents!
made pan-fried dory fish with mushroom couscous for lunch today.
the fish was thawed in milk overnight in the fridge and marinated with freshly ground peppercorn medley, salt and a squeeze of lemon 5 mins before cooking.
