Couldn't concentrate on cooking and taking pics, so my settings were totally screwed and I didn't get one decent shot of the end-product :(
But I'll do this again ... because it was delicious ... and I'll share the recipe and (hopefully) some decent pics, then

So I wanted to make Pasta e Fagioli. But I didn't want to use canned beans, because I wanted to be all authentic and stuff. So I actually cooked the beans from scratch -- I soaked the beans overnight in the pot, then cooked it for about an hour. Then I pureed about 1/4 cup of the beans. Then I made the pasta. Then I sauteed some onions, garlic, and herbs with tomato paste, and added the bean cooking liquid. Then I added the beans and pasta to the soup. Then I ended up with really kick-ass Pasta e Fagioli, topped with Parmigiano Reggiano.
But it was a hell of a lot of work for a hot Sunday afternoon!

Week 3 of our new Keto diet, showing how we are trying to get the balance right. Two meals a day, first about noon to 1 pm, last about 6-7 pm, giving a period of approx 16 hours during which the body has a chance to utilise existing fats within the body. They call it intermittent fasting, we call it less cooking and dishes to wash and more time for important things :-)
