My wife bought Reese's Peanut Butter Eggs for half price after Easter. I challenged myself to make a high end sophisticated dessert from basic ingredients. Mission accomplished and then some in my judging.

Although this dish is traditionally prepared around Christmas, I had a craving that I just had to satisfy. This is Guyanese Pepperpot, a rich stew that can be made with a variety of meats. This version featured Beef Shank, Pork Hocks, and Cured Pigtails.

 

The key ingredient is a cassava based liquid called Casreep. It is a molasses-like substance that gives the dish a deep rich colour. Traditionally, this dish is kept on the stovetop for days, without need for refrigeration, due to the preservative properties of casreep.

 

It's been a while since I've cooked this but it turned out pretty good, with all the meats being perfectly tender. The flavour is rich, with a hint of sweetness but mostly savoury. Craving satisfied!

 

Chef Gordon Ramsay made a version of this, using chicken, on one of his TV shows. It was well received by the Guyanese diners so I may have to try this one day.

Mac and Cheese reshoot in natural light. I made Smoked Cheddar/Swiss Mac & Cheese with Bacon and Homemade Bread Crumbs.

Here's another great Pork Chop from Whispering Meadows Family Farms. I used some Mediterranean seasonings on this one and cooked it using the reverse sear method (again), starting it in my toaster oven, and finishing it on my electric grill. It came out juicy and delicious!

 

I finished the last one in a very hot cast iron pan and it was also excellent! Which method do I prefer - cast iron vs electric grill? Hmmm, tough choice. They were both great. I guess it will depend on my mood at the time.

 

This time, I did the carrots and potatoes in the toaster oven, finishing the potatoes on the grill. The asparagus went straight to the grill, with a little garlic, salt, and olive oil.

It's been quite a while since I've cooked Sweet and Sour Pork but I found the pork (already cut) on sale and I had a craving. The deep fryer made quick work of the cooking, with less mess than I had anticipated. I nailed the sauce first time around! No adjustments needed. Yesss!

For breakfast today on my day off I made a Southern Indian breakfast of Upma. Sooji is the grain I used. I think here in the states we call it farina. I added onions, peppers, peas, chilies, cashews, black mustard seeds, turmeric. I thought sure I had some fresh curry leaves but I was out and really missed the flavor they add.

I came across a great deal at the recently opened Bestco Fresh Foods market in Ajax and I just couldn't resist! They had King Crab Legs on sale at half price - $19.99 (500g).

 

It's been a long time since I've had this so I just had to get some. I usually prepare it with potatoes and corn on the cob but this time I kept it simple by just steaming it and having it with some drawn butter with garlic. Yummy!

 

Unfortunately, as good as it tasted, my shellfish allergy decided to make an appearance. Ughhh! I ended up itching and scratching the rest of the evening. Was it worth it? Heck, yes!

A nice rustic bowl of homemade chicken soup was perfect for this cold weather. This one was made with chayote squash, corn, and leftover rotisserie chicken. It was simple and delicious!

It's been a while since I've had steak. It's a good thing I stocked up on a few of them for a great sale a few weeks ago.

 

This one was sold as a Tomahawk, even though it didn't have the trademark long rib bone. It was however, a bit thicker than what I usually get as a rib steak. Whatever you want to call it, it delicious!

 

I cooked it on an indoor grill, perfectly medium rare, and had it with heirloom carrots, haricot vert, and mashed potatoes. Delicious!

 

I'm still keeping an eye out for the next great sale!

This may be the last time that I use my deep fryer, and only because I still had some oil in it. It's just too messy. I love how the food turns out all evenly cooked and fairly quick but the setup, warm up, and cleanup kinda turns me off these days. My air fryer is a lot more convenient. The results may not be the same but it's a lot more versatile.

 

These wings were brined before being deep fried and then tossed with garlic, salt, and lemon pepper. They turned out great! The fries were also great, something I have yet to perfect in the air fryer.

 

What's your preference - deep fried or air fried?

Chicken Wings have got to be one of the most versatile things to cook. They can be roasted, deep fried, air-fried, and more. Seasonings can be whatever your imagination come up with. I've experimented with many different spices. This time, I used a Jamaican style curry, and cooked them in my air fryer.

 

The results were fantastic! Imagine nice crispy chicken wings with curry flavour - great texture, great flavour. I had it with a simple tomato salad and rice. Delicious! I'll have to do this again!

We went up to "Nancy Kerrigan" Kroger and picked up an 8-piece Home Chef Baked Chicken, two boxes of Kroger Shells & Cheese and two frozen bags of Brussel sprouts. For dinner, I had a Baked Chicken breast over a Veggie salad.

This lamb tasted great! No exaggeration! The seasoning was simple - garlic, rosemary, olive oil, salt, pepper. That's it! It was tender and juicy, despite being cooked past the point I was aiming for (medium rare). I even used a meat thermometer that had a setting for lamb. I'm not sure what went wrong but I'll have to try again...

I was visiting a friend in Hamilton recently and showing her some of the beautiful waterfalls in the area. After a day of exploring, we returned to her host's home for some great homemade burgers.

 

I chose a peppercorn burger, and dressed it with cheese, tomato, onion, jalapeno, and a splash of ketchup. Wow, this was a great burger! It was hefty and had a lot of flavour. The peppercorns made this the best burger I've had in a very long time! Thank you!

These Honey Garlic Wings with Fries and Onion Rings, all done in my air fryer, turned out great! The flavours were delicious and everything was crispy and delicious. The carrot sticks with Ranch dressing was a good match.

I love these pork steaks! They're inexpensive, easy to cook, and very tasty. This time I seasoned it with a Greek/Mediterranean blend of herbs and spices, similar to what I use on souvlaki. It was cooked on an indoor electric grill and it tasted great!

I know I said I'd retire my old oil-filled deep fryer a while back but I had some oil to use up and some wings to cook. It's the perfect match up.

 

I made a simple wet batter with garlic, salt, pepper, flour, and cold water. For added texture, I added some cornmeal to the batter. The fries were also done in the deep fryer. Everything turned out great but I'm still not a big fan of cleaning up oil splatter.

Even though the weather has been very warm, I had a craving for soup but I wasn't sure what type of soup I wanted. I was hoping a stroll through my local market would inspire me, and it did!

 

I found some chicken on sale at a great price, plus some other ingredients that kinda led me to making a Jamaican style Pumpkin Soup.

 

Besides the chicken, I also got pumpkin, chayote squash, carrots, and corn. I would have picked up some salted pigtails but this market didn't have it.

 

While it was cooking on the stove, I was adding some herbs and spices and then disaster! The lid from the black pepper fell off as I was shaking it into the pot. Holy crap! Luckily, I wasn't stirring it at the time and I managed to scoop out most of it but it was still very peppery. You can see in the photos.

 

Despite the excessive pepper, it had good flavour. I'll be more careful next time...

Bacon Cheeseburger. The last one turned out so good, I had to do it again! This time, I left it open faced (for the photo) so you can see all the goodness that went into it.

 

This one had two Angus beef patties, bacon, cheese, lettuce, tomato, onions, jalapenos, pickles, and a special sauce that I concocted on the fly. I seasoned it with a dash of Montreal Steak Spice and garlic and served it on a Ciabatta bun. It tasted amazing!
