My wife asked me to bake something today, so I decided on muffins. Team USA backdrop because I am really missing the Olympics. I wish I would have placed the muffin on the white stripe instead.
I made French Toast from a baguette. I topped it with applesauce and a slight drizzle of maple syrup. October in Ohio doesn't usually mean breakfast served on the deck. Al Fresco dining at it's finest. Simple pleasures mean so much in enjoying life.
A simple breakfast to start the day of yard work. Fried Eggs, Sausage and Toast that I covered in a Homemade Cilantro/Lime Ricotta Cheese.
Homemade intensely chocolate cake with a velvety chocolate mousse filling and a decadent chocolate ganache drizzle. This was for a woman I work with that I call my work wife. There was a film crew last night at her small birthday gathering shooting a documentary about her. I am hoping it makes the editing cut and is my first cake on film lol.
I cooked dinner after work today. The polenta I baked in ramekins. The carrots and onions I roasted with the pork.
A homemade chicken salad on a croissant and my take on a gold rush cocktail using Buffalo Trace Bourbon.
It's been a while since I've made this roasted chicken, or at least this variation of a family recipe. Instead of a whole chicken done in the oven, I used leg quarters and cooked it in an air fryer. It turned out pretty good! Some Chinese broccoli (gai lan) with oyster sauce, and sausages (fah cheong) were the perfect accompaniments.

I made a whole lobster for Mother's Day for my wife. I used the shell and made a lobster broth to use to make this Shrimp Risotto. I added mushrooms, onions, peas, shrimp, saffron, butter and lemon zest.
My daughter came in for a vacation and requested I make this for dinner. This is my favorite meal to eat and cook.
I was bored today so I decided to make no bake cookies. I then decided to turn it into a cake. My mother in law used to make a cake with peanut butter frosting so I decided to add that to it.
I made a breakfast for one today. A couple of left over pieces of bacon, soft poached eggs served on rosettes of toast floating in a smoked gouda silky cheese sauce and garnished with spring onions.
I made Portuguese Bread Soup last night for dinner. My wife made Keto Biscuits with Almond Flour so we used those instead of dried hearty bread. The way I make the soup is with Cilantro, Rainbow Swiss Chard, Olive Oil, Leeks, Onions, Slice Garlic and Vegetable Broth.
Edinburg Corner Store in Ohio had Filet Loins on sale for 5.99 a pound. Six bucks a pound never tasted so good. In the oven at 240 degrees for 35 minutes until 124 degrees. I let them rest about 10 minutes and then seared them in a smoking hot cast iron pan while I butter basted them for about 90 seconds a side. Almost perfectly uniform color top to bottom.
We went up to "Nancy Kerrigan" Kroger and picked up an 8-piece Home Chef Baked Chicken, two boxes of Kroger Shells & Cheese and two frozen bags of Brussel sprouts. I had a Chicken thigh and Shells & Cheese for a late lunch.

One of my favorite Indian Dishes to make is Pork Vindaloo. It's made with Pork, Potatoes and about 15 different spices. This dish is not for the weak of heart.
Macaroni and Cheese made with smoked cheddar and smoked swiss cheese and a touch of smoked paprika. I topped it with homemade garlic bread crumbs made from a baguette my wife made and crispy bacon.

Egg Foo Young is a simple dish that's really easy to make, using almost any ingredients. For this one, I used crab (surimi), mushrooms, and bean sprouts. Quick, simple, delicious.

I really enjoy a good Greek Pork Souvlaki. A coworker gave me a recipe many years ago and it has served me very well. It's as authentic as anything served in Greek Town on The Danforth. Trust me on that!
For this meal, I marinated the pork overnight, allowing all the flavour to soak into the meat. It was cooked to perfection in my air fryer and served with tzatziki, potatoes and a salad.
She had given me a recipe for making Tzatziki as well but it would have been too much for myself. Maybe next time.

My Mother would make these for us when I was a kid and I loved them. I make them and think of her and smile. Food memories are some of the strongest feelings I get. Simple leftover mashed potatoes fried up nice and golden brown. You get that crispy outside texture with the creamy inside. The butter and green onions just elevate the taste a bit more and good salting and the simple becomes over the top.

This Tortellini, stuffed with Chicken, was cooked with Italian Sausage, Bacon, and Tomato Sauce, and garnished with Cheese. The flavours all worked perfectly together.

Steaks were on sale again - Tomahawk steaks for only CDN$7.88/lb! Yes!!!
It turned out to be a really good rib steak, thick, tender, and juicy, but I was a bit disappointed that it didn't have the classic Tomahawk appearance with the Frenched long bone and thicker cut. It would have looked great in the pics!
I cooked it on my indoor grill to a perfect medium rare (135F) and prepared some heirloom carrots, mini potatoes, yellow beans, and mushrooms.

I do enjoy a good pasta dish once in a while and I also like making my own meat sauce to go with it. I had found a package with a blend of beef and pork and thought that would be perfect for this dish. I also picked up a package of fresh mushrooms at the same time. Seasonings included garlic, oregano, basil, onion, salt, and pepper, along with tomato sauce. I topped it all with some grated Parmesan. It all tasted really good!

I felt the mood to cook something But wasn't sure what I felt like having. Wandering through the supermarket inspired me to cook a few things that I haven't had in a while.

The chicken with mushrooms was a relatively quick stir-fry. I had two types of Chinese sausages (pork and pork/chicken) so I did both by tossing them in the rice cooker, with the rice. The veggie dish was really simple, using whatever I had on hand.
The steamed egg dish was the most complex and took the longest. It had eggs, minced pork, dried shrimps, shiitake mushrooms, seasonings, and halfway through cooking, I added some salted duck eggs. This is a more traditional Hakka dish that I grew up with and cook once in a while. Have you had it?

We are going over to some friends house for dinner tonight. I made a basket of cookies to take with us.
I had the day off today, as I watched The magnificent Notre Dame burn I was glad I saw it many years ago when I was in high school. I started to caramelize onions to make French Onion Soup but then decided to invent a new dish instead. I present to you a French style peasant soup. I had today off work and was just being lazy. My wife came upstairs and told me Notre Dame was on fire. I flipped on the news and watched saddened to see this magnificent building burning. I saw this place as a 16 year old kid and was majorly impressed even then. I decided to pay tribute in cooking a French dinner. I started to caramelize onions in olive oil to make French onion soup. When they were almost done I changed directions. I added about 8 cloves of minced garlic and cooked it until the smell was right. I took out half of the onions and set then aside. I added chicken stock to the pan with my caramelized onions and garlic and let it simmer down and reduce a bit. When I pulled it off the heat I added some cream cheese and let it melt. When that was cooled a bit I blended it into the most intense velvety soft sauce. I did a quick saute on a couple of chicken breasts and sliced them thin. To plate I put that sexy sauce in the dish first and then added the lightly caramelized onions. I added a few capers for the brine punch to the dish. I added some of the sliced chicken breast and topped it with a touch more sauce. The taste was rich and intriguing and the sauce texture was devine. I sat at the table eating this and my mind wandered to a couple of chefs I used to love to watch. Two Fat Ladies Cooking thank you for what you taught me.
I guess by now you all know my hubby is a chef :). Lucky for me, as I was not inspired for this week's photo, he had planned a fancy meal for tonight, so here you go: a daube made from scratch. Here he was pouring the red wine marinade he had prepared before, where the meat will soak for a few hours. Yum!
