We are going over to some friends house for dinner tonight. I made a basket of cookies to take with us.
I had the day off today, as I watched The magnificent Notre Dame burn I was glad I saw it many years ago when I was in high school. I started to caramelize onions to make French Onion Soup but then decided to invent a new dish instead. I present to you a French style peasant soup. I had today off work and was just being lazy. My wife came upstairs and told me Notre Dame was on fire. I flipped on the news and watched saddened to see this magnificent building burning. I saw this place as a 16 year old kid and was majorly impressed even then. I decided to pay tribute in cooking a French dinner. I started to caramelize onions in olive oil to make French onion soup. When they were almost done I changed directions. I added about 8 cloves of minced garlic and cooked it until the smell was right. I took out half of the onions and set then aside. I added chicken stock to the pan with my caramelized onions and garlic and let it simmer down and reduce a bit. When I pulled it off the heat I added some cream cheese and let it melt. When that was cooled a bit I blended it into the most intense velvety soft sauce. I did a quick saute on a couple of chicken breasts and sliced them thin. To plate I put that sexy sauce in the dish first and then added the lightly caramelized onions. I added a few capers for the brine punch to the dish. I added some of the sliced chicken breast and topped it with a touch more sauce. The taste was rich and intriguing and the sauce texture was devine. I sat at the table eating this and my mind wandered to a couple of chefs I used to love to watch. Two Fat Ladies Cooking thank you for what you taught me.
I guess by now you all know my hubby is a chef :). Lucky for me, as I was not inspired for this week's photo, he had planned a fancy meal for tonight, so here you go: a daube made from scratch. Here he was pouring the red wine marinade he had prepared before, where the meat will soak for a few hours. Yum!
I mixed Cherries, Blueberries, Raspberries, Strawberries, Roasted Salted Pecans, Brown Sugar with a bit of Flour and Cornstarch for the filling.
A quick brown butter base with added maple syrup, brown sugar, vanilla, salt and a touch of bourbon and perfectly ripe bananas.
I had friends coming to spend the weekend so I dreamed up a new recipe for them. Double dark chocolate cupcakes topped with creamy peanut butter frosting and then a piped silky smooth dark chocolate mousse.
I made a poached pears for dessert when my childhood friend came for dinner. This dish has a depth of flavor that is intriguing with the delicate taste of the pears and the poaching texture to put the dish over the top.
I've had lots of good burgers from many different places but this time I decided to make my own and it turned out great!
I made it with two Angus beef patties, cheese, crispy bacon, lettuce, tomato, onions, and mayo on a Ciabatta bun. A pickle, some jalapeno peppers, and fries completed this delicious meal! It was big, juicy, and very flavourful, especially with a dash of Montreal Steak Spice and garlic.

It's been a while since I've cooked anything worth posting. I just haven't been motivated, especially since my sense of taste has been compromised for the past few weeks.
This dish, pork with asparagus, is the first thing I've taken some care to cook in quite a while. Despite my still diminished sense of taste, it turned out pretty good.

I love chicken wings, I love Jamaican food, I love curry flavour, and I love my air fryer, so why not combine all four?
I recently cooked a batch of curry wings in my air fryer. They were seasoned with Jamaican curry powder, and other spices before being cooked in my air fryer for 15 minutes at 400F.While they were cooking, I made a sauce with onions, green onions, scotch bonnet pepper, and curry powder. Everything turned out perfectly cooked and yummy!

This pork roast turned out tender, juicy, and delicious! Seasonings included garlic, rosemary, salt, and black pepper. Simple.
This was cooked in my toaster oven at 350F for approximately 90 minutes. Mashed potatoes, corn, and a mushroom gravy completed this simple meal.

I came across a great deal on pork ribs at a local market. At only CDN$1.99/lb, two racks cost just under $10! Bargain!
Both racks were cooked in my toaster oven, with the first rack being a BBQ Jerk and the second, a Honey Garlic BBQ. Both turned out tender and delicious. I had them with Wild Rice, Corn, Carrots, and a simple salad. Delicious!

Mmm, Ackee and Saltfish is one of my favourite dishes! If you're unfamiliar, it's Jamaica's National Dish.
Ackee is a fruit, poisonous in its unripened state. Here, in Canada, it's available as a canned product, usually for around CDN$9.00 per can. I was lucky enough to find this on sale for only CDN$4.99 each.
Saltfish, or salted codfish, is the other major component of this dish. It found its way to Jamaica, from Eastern Canada, hundreds of years ago in trade for rum, aka Newfie Screech.
Ackee and Saltfish is usually cooked with onions, green onions, thyme, pimento, hot peppers, and spices. I like to start mine by rendering some bacon and cooking everything else in some of the bacon fat. I find it adds a little more flavour. I've also had it cooked in coconut oil. Yummy!
It all combines to make a delicious savoury dish! Try it!

It's Christmas! What better time for a batch of Pepperpot, Guyana's national dish, traditionally served at this time of year.
This batch, made for a pot luck with friends, was made with pork hocks as the only meat. It can also be made with beef, lamb, or a combination of meats. Celebrity chef, Gordon Ramsay, even made a version with chicken.
The key ingredient, giving it a rich dark colour is cassareep, derived from cassava. This ingredient looks like molasses, but not with the sweetness. It has preservative properties, allowing the finished dish to remain unrefrigerated for days.
Very few restaurants serve this dish so find a friend to cook it for you!

I made a poached pears for dessert when my childhood friend came for dinner. This dish has a depth of flavor that is intriguing with the delicate taste of the pears and the poaching texture to put the dish over the top.
My dear friend, Maria, and I were in a nostalgic mood, remembering some of our favourite foods from childhood. One of these foods was a dessert we knew as Ice Box Cake, a frozen dessert made with layers of sponge cake, butter, icing sugar, fruits, and cashew nuts.
We searched the internet for recipes and came up empty. Nothing in our search results came close to what we remembered. Luckily, my cousin has a collection of family recipes, including Mom's Ice Box Cake. Yesss!
Within hours of seeing the recipe, we had all the ingredients and were making this cake. We questioned ourselves along the way, wondering if we were doing it right, but as we made progress, it all came together. It looked good, maybe not as neat as we had hoped, but good nonetheless. It was all assembled and placed in the freezer to set.
Success! It tasted great! As good as we remembered! The sponge cake remained soft, while the fruits didn't completely freeze solid. We had to omit the cashews due to an allergy but it still tasted great! It was so good, we're already planning our next version, maybe made with Mandarin oranges, or lychee, or whatever we desire. Kung Hei Fat Choi! Happy Chinese New Year! It's the Year of the Ox!
I love Oxtail and Beans! This dish is a staple in Jamaican Cuisine. I remember, years ago, before it got popular in Toronto, the supermarkets were almost giving it away. It was so cheap! These days, it has become expensive enough that I rarely cook it.
For this batch, I browned the meat in the air fryer before cooking it down in a pot. The browning process was quicker than doing it in a pot and was fuss free. It took only 15 minutes and was turned only once. The best part about doing it this way? No oil added and all the fat (grease) drained out of the basket.
Once browned, I transferred it to a pot to simmer until tender. To finish it, I added Lima Beans and thickened the gravy. Delicious!

Chocolate-Chip Cookie Banana Pudding
Just a simple substitution makes for an incredible dessert!
Ingredients
1 box (small) banana cream pudding
1 box (small) chocolate pudding
4 cups cold milk (2% or whole (2 cups for each box))
4 bananas (peeled & sliced)
18-24 chocolate chip cream sandwich cookies (reserve at least 4)
1/2 cup milk chocolate chips morsels
Instructions
In a medium size mixing bowl add the pudding powder from both boxes. Mix together all 4 cups of milk according to the instructions on the box with either a wire whisk or hand mixer. Once pudding has come to the right consistency set aside to prepare the banana and cookies.
Using a cutting board or what ever you fill comfortable using. Peel and cut each banana into slices approx. 1/2 in or so and set aside. In a medium serving bowl add a layer of the pudding mixture to the bottom of the bowl alternating pudding, bananas, cookies and chocolate chips. For this particular dish I separated each cookie sandwich and alternated the cookie layer with one side of the cookie down and the other side up. You can choose to layer them whole or as stated above.
With the remaining 4 cookies you reserved earlier, place these in a plastic zip lock bag and crush until cookies become a crumbly topping. Sprinkle cookie crumbles over the top as the finial step. Chill or eat right away. I’m not sure why but when chocolate and bananas are served together it’s more than delicious. Enjoy!
I've been eating out quite a bit lately but I really do like cooking. This time, I did some Greek inspired Pork Cutlets, served with Tzatziki, Potatoes, and Haricot Vert. It turned out pretty darn delicious!

Celebrating a special occasion is always fun, especially when the food is delicious! It was a very good friend's birthday and we had a little backyard gathering to mark the occasion. He did all the cooking!
We had BBQ Ribs, Fried Chicken with BBQ Sauce, Curry Goat, Coleslaw, and Rice. Of course, there was a birthday cake or two and some delicious desserts and adult beverages. Everything was delicious!

It should be quite obvious by now that I love wings! There's an infinite number of ways to season and cook them. My preference, however, is a dry rub cooked in the air fryer.
This batch was seasoned with smoked paprika and garlic, and then tossed in panko breadcrumbs. They were cooked for 18 minutes at 400F, turning them once. They turned out crispy and delicious!

With access to a grill, I couldn't resist cooking some Pork Souvlaki, using a recipe I got from a Greek coworker many years ago. She also taught me how to make tzatziki but it's much simpler to buy it from a store (most of the time). I had this with garlic lemon pepper potatoes. Simple. Delicious.

Pot Luck dinners are always fun! You don't always know who's bringing what until the big reveal. That's just part of the fun. Meeting new friends is often another huge part of it!
Our feast started with some delicious appetizers, including Spring Rolls, Guacamole and Nachos, and a Pumpernickel Bread Dip.
Our delicious mains included Oven Baked Pork Ribs, a Chicken Curry with Potatoes, a Chicken over Rice dish, Pork with Tofu and Eggplant, and Pork Souvlaki. Sides included Asparagus, and Scalloped Potatoes. It was all delicious!
To finish our meal, we had Ube Mochi bites, Mango Sago, and Tiramisu Cake. The Ube Mochi bites were the popular choice!
Everything was delicious and it was a very enjoyable evening!

When I was a young dude and stayed at my grandmother's house she always made applesauce. In the mornings would be toast with a slathering of butter and cold applesauce. My Mom would mix together sugar and cinnamon and sprinkle her magic dust over our toast. My wife made some delicious applesauce that tastes of Autumn. I revisited so many memories when I combined all the memories into one.
