These decadent, tender cookies get their richness from cottage cheese , whey powder and a protein-fortified milk, and have added nutrients from chickpea and oat flour. The decadence comes from a hefty helping of chocolate!

As we waited for our tour guide to sort out our entry tickets, I noticed this large motor cycle mounted (?) cart selling fresh cut fruit. I noticed that Thais usually eat rather healthy snacks, most common being cut fresh fruit with a salt-chilly powder-sugar mix. Here a group of school kids probably on a school excursion, set upon one these fruit snack carts. Back to Kanchanaburi, the town we are in now, in the late-18th century, Kanchanaburi was established by King Rama I as a defensive outpost against possible Burmese attacks in what is now Lat Ya Sub-district. In 1833, the town was moved about 16 km to the southeast along the river to its present site during the reign of King Rama III. Today, the town is best known for it's sordid remains of the tragedies that followed the construction of the infamous Death Railway- we will get there shortly. Here are your ingredients:

 

3 Tbsp Italian bread crumbs

2 Tbsp grated parmesan cheese

1 egg white

1 tsp. fat-free milk

2 large zucchini, cut lengthwise and in half (about 16 sticks)

1/3 cup pasta sauce, warmed

Nonstick cooking spray

 

Preheat oven to 400 degrees F. Spray baking sheet with cooking spray and set aside. Combine bread crumbs and parmesan cheese in a shallow dish. Combine egg white and milk in another dish and beat with a fork until well blended.

 

Dip each zucchini stick first into the crumb mixture, then into the egg white mixture, allowing excess to drip back into the dish. Roll again in the crumb mixture to coat. Place zucchini sticks on prepared baking sheet; spray with cooking spray.

 

Bake 15 to 18 minutes or until golden brown. Serve with pasta sauce and enjoy!

Raspberries for Justin and Aidan.... he wanted to eat these berries before I even tried to take a photograph but I've convinced him not to eat it until I take a shot at it. Sharpen, little... I mean very little crop and USM.

 

Strobist: 2 SB Nikon SB-600 on umbrella. One at 6ft high angled at 45 degrees facing down and other at around 3ft high facing at 90 degrees from left side. Fired at manual setting 1/16th power. Triggered with Nikon CLS.

  

Thai fruit vendor- this kind gentleman readily posed for me at my request. This is a large cart selling fresh cut fruit- a favourite healthy snack which you can see all over Thailand. While I could not part take in his wares, I did manage to catch this obliging chap just outside the JEATH War Museum inKanchanaburi, Thailand. Views of his cart appeared earlier in this album- I couldn't help but admire the variety of his wares. Actually, this was my first solo trip post breakup, and I was still taking my first baby steps into solo travel, learning the ropes, so to speak. It was nice that I'd bought the book from the trinkets vendor lady a few moments earlier (see previous pictures earlier in this album). She was still around, and since this gentleman could not understand what I was on about, the kindly trinkets lady translated to him that I wanted to take his picture. He obliged without hesitating. I am on a day tour to Kanchanaburi to check out the horrors pertaining to the infamous Death railway, constructed by the Japanese between Thailand and Burma, which led to the death of thousands of POWs and labourers from disease, malnutrition and ill treatment. this is shot on a piece of foam core for a white base. Working on the white balance thingy, so constructive comments appreciated.

 

I use Paint shop pro x3 right now, going to get ultimate 4 pro before long. I know this one is slightly out of flat, you can see it in the juice.

 

I also shot this after doing a white balance in the camera...........shot another on auto, I think the white balance adjust in camera is over rated!

 

If other foods tempt me with their tastes, popcorn tempts me with its smell. It has got that hot spicy smell.

Strawberries with a sprinkle of powdered sugar makes for a great late night snack. Mmm..Good!!
