this, my dear friends, is how you make the perfect tiramisu. this real thing. it's super-simple, so be a bit demanding when you purchase the ingredients for this. buy the best mascarpone you can afford, and real vanilla. fancy sponge biscuits are awesome, too, but the cheapest ones do the job just as well.
traditional tiramisu
prepare the day before intended consumption, serves 4-6
4 eggyolks of very fresh free range eggs
80g sugar
1 vanilla bean
500g mascarpone
200ml espresso, freshly brewed and cooled
4cl grappa, brandy or amaretto
at least 200g sponge biscuits (i usually buy two packets)
dark baking cocoa
* mix egg yolks with sugar in a food processor until sugar is almost completely dissolved and the mix has a creamy and fluffy texture. this will take several minutes.
* add scratched out contents of vanilla bean. mix a few more seconds.
* put away food processor. from now on you need to use an plain old whisk. be gentle with the mixture. if you're to rough, the mix will get runny.
* now slowly and gently stir in mascarpone. this is easier if you’ve already smoothed it by stirring it a little with a spoon while still in tub.
* stir gently into mixture until all big clumps are gone and mixture is pretty even. put aside.
* combine the cold espresso with the booze.
* now layer the tiramisu. put half of the sponge biscuits into a low ceramic or glass soufflé tin and soak with half of the espresso/alcohol mix, put half of the mascarpone mixture on top, evening it with a spatula.
* layer the rest of the biscuits, soak with remaining espresso and cover with rest of the mascarpone mixture.
* cover tin with cling wrap and put in the back of fridge (because it’s the coldest there). wait at least 24 hours.
* when you can’t wait any longer, remove cling wrap, sprinkle thickly with cocoa through a sieve and serve.
* enjoy!
[in the unlikely case that there are any leftovers, quickly cover with cling wrap and refrigerate asap. while the tiramisu gets yummier the mushier it gets (it’s usually perfect at 48 hours after preparation), any leftovers should be consumed as quickly as possible. because of salmonella and friends.]

Imagine our horror when we unpacked the stockings from the attic and discovered that Favre, Rollie, and Matsui all had their own (from L.L. Bean), but Fabi and Zizou were stockingless. Well. I'm trying to remedy that by making them from felt; this is Fabi's, with a gingerbread mouse theme. It's coming along pretty well, I think.

My New Year's Eve attempt to wear something somewhat festive. To that end, I also wore a little hat with feathers and a veil (Modcloth) - see photo below.

Today is the big flooring day, which meant that all of the rest of us (carpenters, Eric’s guys and Eric and I) decided to stay away. I went to Williamsport to try to think of all of the things that we needed to buy or pick up. Bathroom lights - check, shower curtain rod - check, fancy surge protector - check, bathroom accouterments… ((gasp))…. ((choke))… cannot… handle.. this decision… ((gag))….. ((Angie collapses into a lifeless pile in aisle 78 of the Lowes)). Yes… that was my breaking point today: the point where I had to decide if I wanted my bathroom “things” to match the fixtures (chrome) or the cabinet nobs (oiled brushed bronze). I forgot what the paint looked liked. I couldn’t decide about a shower curtain color (use old one or buy new?!?) And so I just retreated. Oh well. I’ll go back with paint samples and feel at least SLIGHTLY better about the decision that I make. I hope.
Meanwhile back in Canton, Steve the flooring guy was installing vinyl in our downstairs family room, entry way, laundry and half bath and the carpet pros were carpeting our stairs, bedrooms, closet and hallway. The result is wonderful. I LOVE that plush carpet is back in style. I forgot how much I love it compared to boring old berber. Our gray carpet in our bedroom is warm and fuzzy and the living room is luxurious feeling. I really really like it! The place looks so much more finished than it did yesterday (Yesterday… the scene of my last mini-breakdown where I curled up in a ball on a pile of cardboard in the middle of the living room whimpering “we’re not ready… we’re not ready to move yet!”… yes, I’ve been a pilar of stability this week!)
In honor of the house looking very complete and feeling very livable we, of course, moved a bunch of our crap in! We called up the muscle (i.e. Tom & Lee) and the guys moved the most annoying piece of furniture we own, our entertainment armoire. Somehow, this was the smoothest it has ever moved. So now it, along with our dinette set, our buffet table, our desk, one bookshelf and the guest bed, are all living in the new house. The best news of all is that even with these LARGE pieces the rooms still feel big! I’ve lived a lot of places where after I move things in, the rooms feel TINY, but not the case here. I simply cannot wait to be completely moved in…. but we just have so much stuff. I think we may just move the essentials and then invite people to come take away anything else… because I really think I don’t need all of this STUFF!!
Tomorrow’s tasks: Doors (I hope!), HRV in the garage, laundry room, bathroom lighting, downstairs half bath, and finishing of the attic system.

Whilst visiting the Imperial War Museum, Duxford the unmistakable sound of a Royal Air Force Chinook helicopter could be heard approaching. Stepping outside we watched the aircraft approach and then carry out a series of landings and take off circuits from the adjacent airfield. Unfortunately, the Chinook was too far away with the sun in the wrong position and basically beyond the capabilities of my Samsung A7 phone camera to take a standard acceptable image. However, as you can see all was not lost and I have managed this more dramatic/artistic black and white effort, 2nd December 2025.
