CAMP ITAMI, Japan - Some of the finest cooks from U.S. Army’s I Corps and the Japan Ground Self-Defense Force Middle Army chopped, stirred, fried and baked their way through Yama Sakura’s Iron Chef competition conducted Dec. 5, 2015, at Camp Itami, Japan.
The friendly competition comprised two teams (one American, one Japanese) each given two hours to prepare and present a four course meal to senior leaders from the U.S. Army and JGSDF participating in Yama Sakura 69, one of the largest bilateral command post exercises in the Pacific.
A panel of 10 judges that included Army Lt. Gen. Stephen R. Lanza, commanding general, I Corps, JGSDF Lt. Gen. Junji Suzuki, commanding general, JGSDF Middle Army, and Army Maj. Gen. James F. Pasquarette, commanding general, U.S. Army Japan, graded each team’s meal on three 10-point scales based on taste, presentation and creativity.
The American team placed in front of each judge a garden salad, sushi, baked potato, shrimp, ribeye steak and frozen custard. After several minutes of commentary between mouthwatering chews, the Soldiers cleared the table to make way for their Japanese allies to present a traditional Japanese cuisine complete with jellied fish, Miso soup, mixed vegetables, sweet buns and an assortment of fried meats.
Team USA took home the winning plaque—a cutting board engraved with the YS 69 emblem—after the judges revealed their total score of 483-478.
Every contestant received a certificate as well as a commemorative coin from Lanza. Both teams look forward to a rematch in 2016.

I have never flown in a helicopter before and it’s always been a dream of mine to try it. Then when we were arriving at Mount Cook it was turning out to be an absolutely amazing day with not a single cloud in the sky except for one that was hovering above Mount Cook. It was not cheap to fly but once I saw those clear blue skies and having been absolutely flabbergasted by how beautiful the mountains are here I decided to go for a spin.
I’m so glad that I did it and that I did it on the day I did! We got the most insane views of glaciers not accessible to normal people and I got to experience 35knot winds and -12C up on a mountaintop when we did a snow landing. Best of all on the way back we saw mountain goats that were running up and down the cliffs. First of all these animals lack all sense of fear of heights! They must also have suction cups on their hooves because I saw one that got scared when he was on a cliff and then ran down a vertical slope! If I hadn’t seen it myself I wouldn’t have believed it, absolutely insane!
So if you ever get the chance to fly in a helicopter in New Zealand, take it, it’ll be worth it : )

Pozole is a hearty soup that originated in the state of Jalisco. The main ingredient is hominy - dried white or yellow corn kernels that have been boiled and soaked in slaked lime to remove the hull, and then drained, rinsed, and cooked for about 2 hours. Pozole also contains garlic and dried chiles and is often made with chicken or pork and is always served with fresh toppings such as cabbage, radishes, cilantro, a pinch of dried Mexican oregano and lime juice. This recipe is easy to prepare at home using canned hominy for convenience.
And what a great Cook he was. The life of a cook isn't always at full speed in the kitchen, sometimes he gotta wait. At that time, with a couple of plates full of cheese curds, he was waiting for the fries to become crispy in the oven. Even far away from home, we found a way to make our beloved poutine.
Cooking meals with friends in the kitchen of a moving passenger car was one of many things we took time to enjoy at the fullest during our trip!

The township of Cook on the Adelaide Perth rail line is now only a whistle stop and refueling point for the Indian Pacific as it crosses the Nullabor Plain. Formerly a busy rail town, it now has a permanent population of 4. These were the original jail cells. Fortunately, they were only used as holding cells until the next train came through. With temperatures frequently exceeding 40C, a long stay would not be enjoyable.
