Mottershall whose been cooking across Canada over the last 15 years describes the food at Loka as an exploration of Canadian cuisine, with an a la carte menu that changes based on ingredient availability from the small producers he sources from. “We buy whole animal and have a zero waste policy. We have a charcuterie program where cures will rotate and we have a section on the chalkboard that includes what is in the chamber and will be ready soon.” There is a $100 tasting menu that’s only available at the 2-seat Chef’s Table which includes some items that are not available a la carte (shown here).

Having been a Kickstarter supporter, this was my own meal (and as luck would have it, partook in the very first tasting menu served at the bar). It was only after that I used the shots from the meal for a profile piece on Toronto Life.

The NOLA vs Carolina Chef Battle on Dec. 29, 2018 at the Treme Hideaway in New Orleans was one for the record books! This gourmet tailgate cookoff featured Celebrity Chef Jerome Brown representing the Carolinas, and Chef Wendell Randall representing New Orleans. Chef Rome is the author of Carolina Soul: The Down Home Taste of the Carolinas, is a native of North Carolina, and has appeared on The Food Network, ESPN, Sister Circle Live, the 700 Club, and other national media. He's also cooked for such celebrities as Shaquille O'Neil and Byron Cage. Chef Dell is a native of New Orleans, and is the owner of Cookin For You Personal Chef and Catering and a consulting chef at Half Shell on the Bayou Restaurant in New Orleans. He has also cooked for the New Orleans Saints, Lil Wayne, and the University of Kansas.
