Day 42...
Calzone and a Black and Tan. Nice dinner with the fam after a long BS filled day. Actually it was towards the end that sucked.
Missed out on a photo OP today. There was a Memorial service. Two soldiers in my buddies unit lost their lives recently during their tour in Iraq. Wish I didn't have other BS to deal with. It would have been nice to get a chance to take photos at the service. As much as I don't like being in the Army it's still sad that soldiers have to lose their lives.
Today's lunch (and likely dinner too - it was pretty big!) from Mellow Mushroom. Pizza dough stuffed with mozzarella cheese, spinach, tomatoes and mushrooms, accompanied by pizza dipping sauce.

Rachel and I had a $20 certificate from TheLunchDeal.com for Rome's Pizza, so we used it tonight. I got this gyro calzone that has gyro meat, onion, tomato, pepperoncini, oregano, mozzarella and feta cheese and it was delicious!
Calzones at a street fair in Ridgewood - the kind that make you long for the Our Lady of Mt. Carmel feast in Williamsburg, where they make DEE BEST calzones.
カルツォーネの方が高級感がある気がします・・縁の成型に手間がかかるし^^;
あっちゃんに食べさせたいな・・・♥

I made a tomato sauce with a 6oz can of tomato paste, 1/4 cup of diced onion softened in 1 teaspoon of olive oil, added 4 cloves of garlic sliced thin and 2 tablespoons of butter....very thick and strong but yummy, in another pan I put 1/4 of an onion in a little of the tomato sauce to soften the onions, then added the spinach i had left over from last night and another clove of garlic, i rolled the dough thin and stretched it to fit the pizza pan I have, let it rise again and then layered it with the tomato sauce, homemade ricotta, spinach and onion and sealed it with a 3/4" seam and baked it 30 minutes on 405 degrees......yummy and we are making more ricotta NOW!
