This is the quintessential absinthe cocktail experience. Cool water is slowly decanted over a sugar cube into an equal amount of absinthe. The resulting pale green wisps of water / liquor emulsion that forms is known affectionately as the "green fairy". One does not stir an absinthe cocktail, but allows the swirls to slowly coalesce until the entire concoction turns a milky emerald suspension.
