I am approaching the 100 pounds lost mark ( I am hoping to hi it when I weigh in on Sunday) SO I thought it was time to post a new selfie. I have lost 97.4 pounds in 13 months. Wish me luck for my weigh in! Oh and my eyes really are 2 different colors before anyone thinks my editing skills are off haha! Normally one is greenish and one is brownish. They are actally closer in color than usual here.

I don't even recognize myself in the first picture. I'm not sure how much I weighed there because it was quite a few months before I made it to a Weight Watchers meeting. I would guess it had to be close to 200 pounds. Below, I'm at 140.

Broccoli in Mozzarella and Parmesan Sauce
One of the creamiest broccoli recipes you will ever taste!
Heavy cream + mozzarella + parmesan + broccoli = pure goodness!

Servings: 1
Ingredients:
1 Tbsp Butter
1 Garlic clove, chopped
1/2 White Onions, diced
1/2 cup heavy Whipping Cream
1/2 tsp Cornstarch
1/4 cup Water
Salt and pepper
1 cup Broccoli florets
1 Tbsp Parmesan Cheese
2 Tbsp Mozzarella Cheese
Procedure:
1) Over medium heat, melt the butter using a non-stick pan.
2) Add the garlic and saute until fragrant.
3) Add the white onions and cook until translucent.
4) Pour the heavy whipping cream.
5) Add the cornstarch.
6) Add the broccoli florets.
7) Add water if the sauce is too thick.
8) Season it with salt and pepper.
9) Add the parmesan cheese.
10) Lastly, add the mozzarella cheese. Stir the mixture until well combined and the sauce is thick and creamy. Serve.

The first time I went to the gym was on Saturday the 7th of April. We worked my legs and core. My legs were sore the next day. I spent about 30 minutes doing cardio also.
On April 9th, I went to the gym and I worked on my cardio for about 30 minutes.
On April 11th, I went to the gym and worked on my arms. The exercises I did was shoulder press, Arnold press, and dips. I did three sets of each. I did ten reps with the with ten pound free weights for the Arnold press. Twenty reps of dips. Twenty reps with five pounds on shoulder press. I also did the fun ropes for three sets a minute each.
This is hard work! On the third set of shoulder presses, my body was starting to fatigue around rep 13. I wanted to give up but I couldn't. I pushed through the pain so I can get my drink of water. After the set I had this overwhelming rush of emotion. I almost broke down crying because I finished the set with a sense of accomplishment. After the workout I did 25 minutes of cardio.
It's funny, when I go to the gym I get nervous but when I'm there, I'm fine. When my trainer comes gets me for my work out, I feel a little nervous but I am fine after awhile. He kicks my butt! In the end it's all worth it. I get a high when I'm done working out and it's the best feeling.
Today I reached a milestone.
In 2010, I set out to reclaim my health. In doing so, I lost 60lbs, bottoming out at a weight of 190lbs. But despite that achievement, my goal was to hit 180lbs; I was 10lbs short of my goal.
In the years that followed, my weight and my health overall has yo-yo'd. I gained ALL the weight that I had lost in 2010 back, and then some. Since 2011, I've been on a personal crusade to get to the bottom of my ongoing health problems, which started 8 years ago (2006) this month.
That crusade has led me to a dozen different medical professionals in a variety of disciplines. In 2012, I got really aggressive in trying to figure out what ailed me, and by Early 2013, we began exploring the role my diet plays in my overall well-being. I was put on a very restricted diet (NO sugar whatsoever; reading ingredient lists on food products became routine), and we started to see some minor improvements, which suggested we were on the right track. But despite everything we did, my core problems remained. I slowly started returning to a "normal" diet, thinking we needed to look elsewhere for the cause of my health woes.
In August, my digestive health took a turn for the worse and I was put back on a very restricted diet, moreso than even before. In August alone, I lost almost 20lbs, and the weight has been steadily falling off ever since.
I've remained on a very restricted diet since August (and became even *more* restricted in December), and even though the diet hasn't fully addressed my core health problems, the "collateral damage" has been a significant weight loss.
Today, for the first time in over 15 years, I weigh under 180lbs.
A year ago, my weight maxxed out at 260lbs; I've lost 80lbs in that time.
Unlike 2010, virtually none of this recent weight loss was achieved with exercise. I simply haven't had the energy to exercise. This is all diet. But it hasn't been easy. I've impressed myself with the degree of dicipline I've needed in order to stick with the diet, but I've been up for the challenge. The goal was never primarily to "lose weight"; it was to "get healthy" and feel like myself again. It's amazing how disciplined you can become when you want something bad enough and are prepared to do literally anything to achieve it.
What you don't see in this picture (aside from 80 extra pounds of me) is, likely, the cause of my ongoing health problems: the Epstein-Barr Virus, or 'EBV'.
We finally uncovered the virus just before Christmas and is thought to be the root cause of all my health problems.
EBV is the virus responsible for Infectious Mononucleosis (Mono; 'The Kissing Disease') and is also involved in the development of Multiple Sclerosis (MS) and Chronic Fatigue Syndrome (CFS).
Essentially, I feel like I've had a Flu (think about how rotten you feel when you have a Flu) continuously for 8 years. Sometimes it gets better, sometimes is gets worse, but it's always there to some degree. The list of symptoms I suffer with is long (I won't go into it here); it has ruined my career (under/unemployed since 2008) and my social life, among other things.
Quite literally, I would gladly put 100lbs back on if it meant I would feel "normal" again; because I haven't truly felt like myself since February 2006. Some days I don't even know what "normal" feels like anymore.
But, at least now I (think I) know what I'm up against, and I will continue to fight with the same discpline in order to beat this virus that my diagnosing Doctor told me "has no treatment or cure." I simply don't believe that; I refuse to submit to the idea that I will be ill (or progress to completely disabled) for the rest of my life. My perspective is simply: I will either beat this, or die trying. Period.
My career is slowly coming off of life-support as I have bursts of time where I *do* "feel better", though it looks *very* different from a "traditional" career (complete with all the struggles one would expect; A "steady paycheque"? What's that??). But then, I've never been one to follow the crowd anyway. But I digress...
Lightning seems to have a way of striking me multiple times; I've now lost 60+lbs TWICE in recent years. I don't mind patting myself on the back for those achievements.
I've come to learn what the power of discipline can do; to simply do literally whatever it takes with an unwavering focus on the goal. If you want something bad enough, there is literally nothing that will stop you from reaching that goal. If you don't, you'll find excuses.
Right now, I'm in the fight of my life. For my health and for my career. Settling isn't an option. Don't tell me it can't be done or it's unrealistic. I have a tendency to take such statements on as a challenge, and I usually prove them wrong.
