With the fire stoked the evaporator will process 25-30 gallons of sap per hour. Evaporating the water is driven off as steam and leaves the sugar behind in the pans. A hood over the pans vents the steam through the roof...without this the inside of the sugar shed would become saturated with water.

When the fire is at its hottest there is very little smoke venting form the smoke stack.
