This is what I picked up today at the farmer's market. It cost me $20 and will last me at least a week making nearly every meal at home. Everything is local, organic and seasonal. Salad mix, heirloom tomatoes, sweet peppers, assorted summer squash, radishes and squash blossoms.
The heap of these green, slender and nice shaped beans displayed in one shop along Buffalo Road located at Little India caught our eyes as we were walking towards Tekka Market for ginger tea with YH. ER and I were curious enough to go for a closer look. We ended up buying some although not knowing its name.
On enquiry, one young Indian lady patron just told us to sauté them or use them in vegetable curry. I was told a lot of people like these legumes too.
To prepare them for cooking, I just removed the ends of each bean and cut them into short lengths. For this time, I just stir-fried them with the leftover squids, fish sauce, pepper, salt and pinch of ajinomoto. In comparison, the cooked beans were a little more chewy then French beans and had a mild bitter taste. Anyway, we ate them all.
1 tablespoon plus 1 1.2 teaspoon olive oil
1 red bell pepper, sliced in large pieces
1 yellow or orange bell pepper, sliced into large pieces
1 small red onion, quartered
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon balsamic pepper
1/2 cup chopped fresh basil leaves.
Heat oven to 425 degrees F. Spray oil into large roasting pan. Cut potatoes into 1 1/2 inch chunks. Drizzle 1 tablespoon olive oil onto potatoes toss to coat. Roast for ten minutes in oven
Add the garlics ,peppers and onion. Drizzle some more oil. Sprinkle with the herbs, salt and pepper. Roast for another 18 to 20 minutes.
