We tried to re-create the soup we had at the Many Glacier Hotel restaurant, and while we recognize that it was probably so good because it was FOOD!, I'm not sure we quite got it the same. But we still really liked this and will make again.
Curry Cauliflower Soup
1 onion
3 carrots
4 - 5 potatoes
4 c water
2 cans coconut milk
salt
3 cloves garlic
1 tsp ginger
3 tsp tumeric
1 tsp cumin
3/4 tsp mustard
4 tsp curry
1 lb cauliflower
Saute the onions. I used coconut oil. Add carrots. Add garlic, spices, potatoes, water, coconut milk. Boil soup; cook low 20-30 minutes, till potatoes tender. Add cauliflower (frozen). Blend a little.
kale, half red apple, carrots, 1 tsp. beet powder, small piece of ginger root, small piece of tumeric root, swiss chard, celery, cucumber
cucumber slices steeping in the pickling liquid: vinegar, mustard seed, celery seed, brown & white sugars, and tumeric. That's where the color comes from.
Red pepper, yellow pepper, sugar snap peas, a handful of walnuts, a large carrot, and a large courgette, stir fried for 5 minutes in my own curry sauce. Served with boiled brown rice with tumeric, garnished with a few mint leaves.
I threw this together for our vegan potluck today... it was yummy!
Romaine lettuce, red onion, strawberries, raisins, pumpkin seeds... oh, and chopped celery and chopped zucchini
Dressing (3 tbsp tahini, one lemon, 3 dried apricots, fresh cilantro and parsley, black pepper, tumeric, dab of olive oil, tsp of organic sunflower lecithin, pinch of sea salt... blended with about 3/4 cup cup of water)
dyed with tumeric, cabbage, coffee and beets. I used a 1/4 cup of salt and vinegar as well. Bodhi drew with a white crayon on some of them, and I used one to write the names of the people we will spend easter with.
Easter 2007 eggs made with yellow onion skin, tumeric powder and the blue eggs are made with red cabbage!
I really want to say this is just Chicken with some roasted Green Beans and Rice. Served with some sorta..sour cream tumeric sauce? I tend to do that sorta stuff.
