Plain cooking. The rice was mixed with shittake mushrooms sauteed with onion and a little fennel seed, and bound up with an egg. Then I baked it an hour in a paprika/tomato soup.

I haven't been feeling my best after a medical procedure. So I have a hard time with solid foods right now. Also everything good doesn't need to look beautiful; if you had the time you'd add seafood or potatoes, but this is good when you aren't feeling great.

2 diced large jalepeno's

1 full clove of garlic

add stock, water, and seasoning and let it sit.

Some Rosemarie, uncut

Yellow pepper diced.

More water with a slight seasoning decision.

A little over seasoned with kosher salt but I forgot the simmer time.

Chili Pepper, and the yellow is Tumeric.

25-45 minutes depending on temperature and timing.

-oh and always stay mid to low depending on your burner. you don't want it to boil over

Two bowls worth were basically made.

Kari Kapitan is a popular Nyonya dish and is served in most Peranakan restaurants. It is a dry chicken curry. The lemongrass, yellow and red colour and sweet and sourish taste that makes this a distinctive Nyonya dish.

Vegetable Curry:

 

In a pot add 1 clove of garlic and add, 1/4 tsp tumeric, 1/2 tsp cumin, 1 tsp corriander, 1/2 tsp ginger, 1/2 tsp garam masala, 1 1/2 cups chopped or canned tomato, and, 1 chopped green pepper and 1 hot pepper, minced. Heat on medium heat for about five minutes, sitrring occaisionally so it doesn't burn. Throw in about 2 cups of chopped black kale (or another dark leafy green), 1 chopped summer squash (whatever you may have, like zucchini) and 1 cup of chopped broccoli. Heat until the vegetable are tender. Garnish with fresh cilantro. Add salt to taste.

 

Cumin Rice:

 

In a pan toast 2 tsp of cumin seds until fragrant (about 30 seconds) add 1 1/2 cups of brown rice and 3 cups of water. Cook for about 40 minutes until the rice is cooked through.

 

Curried lentils:

 

In a pot add 1 cups rinses brown lentils, 1/4 tsp tumeric, 3/4 tsp cumin, 1 tsp corrianfer, 1/2 tsp garam masala, 1/2 tsp ginger, 3/4 cup fresh or canned tomato, 1/2 tsp cayenne, 3 cups of vegetable stock or water. Bring the water to a boil, then simmer for 40 minutes, or until the lentils are tender. Add salt to taste and serve.

Some fresh venison back-strap and back-steaks, sauted in olive oil, butter, garlic, ginger, fresh chilli plus a sprinkle of cummin, tumeric, fenugreek, black pepper and cayenne. A Chinese (especially nyonya) tradition. A a newborn is one month old, the parents will give these packages to friends and families to celebrate. It consists of nasi kunyi or tumeric rice, red eggs, red cakes and curry chicken.

Dry Cabbage Curry

 

2 potatoes, peeled and cut into wedges (I do 6 per potato)

 

- Fry gently in 2 tablespoons oil or equivalent ghee for 4-5 minutes

 

panj phoran:

½tsp each aniseed, mustard seeds, fenugreek seeds, onion seeds;

1tsp cumin seeds.

 

1 bayleaf

 

- Add to the potatoes for 30 seconds

 

1 cabbage, shredded

 

Spice mix 1:

½ tsp tumeric;

1tsp each cumin, sugar (jaggery);

2 tsps coriander.

 

- Stir both into the pan and cook gently with a minimum of water.

 

Spice mix 2:

2.5 cm cinnamon;

3 green cardamoms;

3 cloves.

 

- Roast, grind and stir into the curry. Add salt to taste and steam another 10 minutes.

 

TBWITWW decided to experiment with dying fabric with natural dyes this week, here are the results.

Left to Right are: Tumeric, Saffron, Beets, Spinach, Sumac, and Coffee

Across the top is an undyed piece for reference.

The blue is natural indigo dye, similarly fermented to the Ajrak rust, with dates, though kept basic with lime. The orange is alyzerine maybe mixed with tumeric. They also dye with Lac (shellac) which is a hard residue that a bug leaves around its eggs on trees. It makes an amazing maroon color, and is one of the most ancient natural dyes, like indigo.

Here is the recipe for the potato thing so you can make it at home (this is from Madhur Jaffrey's World Vegetarian):

 

1-1/4 lb. boiling potatoes (I used fingerlings!)

1 egg yolk

1 c. milk (I used half and half instead)

1/2 lb. queso fresco (the recipe says to use feta, but I used Salvadoran q.f.)

1/2 yellow bell pepper, chopped

1-2 fresh hot chiles, chopped

1 garlic clove, chopped

1/2 t ground tumeric

1-1/4 t flour

Salt (opt.)

 

Boil potatoes until tender.

 

Sauce:

Combine egg yolk, 1 c. milk, and cheese in blender, blend until smooth, and leave it there.

Put oil (the recipe says 1/2 c. but I used about 3 T) in frying pan over med. heat. Add peppers, garlic, and tumeric when oil is hot. Saute 1-2 min. until soft. Add flour and stir a few times. Turn heat to low and add paste from blender. Stir until sauce is thick, about 2 min. Taste for salt. Pour back into blender and blend briefly, adding milk if needed to make sauce the consistency of heavy cream. The sauce is supposed to look that way (bright yellow).

 

Put potatoes in serving dish (I had these sliced into 1/2-in. thick rounds, and also a little chunkier in Peru) and pour sauce on top. Peruvians like to serve this garnished with lettuce, quartered hard-boiled eggs, and black olives. I have eaten this dish both cold and hot in Peru, but I think it's best when eaten warm.

Put the rest of the roast chicken in the pot with celery and carrots and potatoes and scallions. With ground pepper, ground pink peppercons, paprika, tumeric, and celery seed.

Nasi kunyit is tumeric glutinous rice. Usually eaten with chicken curry.

Here is another scarf from my spring line. The fabric is a sumptuous cotton voile; super lightweight, and yet with a high thread count, so it's incredibly soft. I love the combination of this tumeric gold with the grey. The fabric print is by Anna Maria Horner (her Little Folks Voile collection).

I got proof once again....Mall Walking Arms down by their sides and head pointed sideways Mall Yacking hahahaha hahahha hahaahahahahah!! Mom joined class too and did her swimming legs and arms for most the class!! Well, she said she was but she may have been playing the 3CM's trick!! HAHA!! SIT Indonesia: Religion, Arts and Social Change, Fall 2016

Cultivating turmeric directly from Indonesian soil to be used to make 'loloh' (traditional Balinese medicine). This was done right before we crossed the river to visit the local Balian (traditional Balinese healer). Together, these two events helped us students better understand the potential impact and spirituality of food so that we could contextualize and internalize the true meaning of "food as medicine". This took exploring the jungles and rice fields of Indonesia, seeing food so un-removed from the soil and learning from those living on opposite ends of the world; using the world as my classroom to add new value to every dietary decision that I make.
