Stuffed jalapeños — They obviously give jalapeños steroids these days. They are too big for the jalapeño rack I went out a few years ago and spent good money on. I’ve had to use alternative strategies. I cut out about 1/3 of the jalapeño on the “flat” side and make sort of a “boat” out of it. I stuff it with meat and cheese and go to town.
