05.11.08 : Vietnamese Spring Rolls with Chinese Sausage, Dried Shrimp, Eggs, and Jicama

A homemade affair in my friend's kitchen for a post-Christmas dinner.

Chicken fried rice and shrimp spring rolls, Vietnamese style, Seattle, Washington, USA

Glenn the ponderer, Kevin and Huan being their cheerful selves, Devin...Why so salty man?

 

Rice Paper

Firm tofu, cut into strips

1 cup glass noodle, cooked and chilled

Shredded cabbage, carrot

Cucumber, cut into strips

Favorite sprouts

3 tbsp Braggs

1 tsp ginger

1 tsp sweet chili sauce

1 tbsp water

 

Marinade tofu several hours.

Moisten rice paper and layer ingredients then fold.

 

Add 1 tbsp peanut butter to the marinade and whisk your sauce.

  

They tasted good but could've been rolled tighter and more neatly.

We had some yummy summer rolls, crunchy spring rolls, and a plate of these flat discs of rice noodles, topped with a crunchy mixture of nuts, sesame, dried pork and dried fish. A light but tasty snack!

We decided to have a chinese naughty night . Octo had the chicken chow mein with crunchy noodle's. this was very yummy. i have my taste back (yeah)!!

I am so happy that some of you want to join me in this gardening, local eating, photo taking challenge for the next few months!

 

First up, some tasty spring rolls. The lettuce, mint and garlic chives came from my garden. Not in view is the peanut sauce. I fried up some herbed tofu cubes to add protein. I think Sam ate about 10 of these. I'd call that a success.

Success! A spring roll... about to be eaten.

I'd never made fried spring rolls myself before. And, um, turns out it's better to wrap them TIGHTLY. I didn't, which meant my wrapper-shell cracked apart really easily. But it was SO yummy.

  

We made spring rolls, a fried fish with curry sauce, and a crazy weird indonesian pancake/crepe dessert, which I liked.
