This is the Common Snapper
The Common Snapper has smooth Carapace. They have survived over 40 million years. They can weigh as much as 100 lbs but in the wild more like 22 lbs. Temperature determines the sex of the egg. They need to be incubated in the 80 degree range. Cooler Temperatures result in more male snappers. Global Warming even by a few degrees would drastically affect a generation of turtles.
They lay their eggs on land usually far away from water. The female can hold sperm for several seasons using it as necessary. she will lay 25-80 eggs. Incubation is 9-18 weeks. In cool climates the Hatchlings winter in the nest.
The Common Snapper is cold tolerant they may not hibernate and can remain active under the ice in winter.
Once matured they do not have many predators. They eat plant and animal matter and use their "snap" like jaws to kill their prey. Their other defenses is a hissing sound, their claws and the ability to move/stretch their neck as far back as their Carapace. When stressed they also release a musky odor from behind their legs. Due to their massive size they are unable to retreat into their own shell.
I believe this was fried snapper? At least I think that's what he said. I really should pay attention and/or take notes. Some kind of fish anyway, breaded and fried and very nice. Light and fluffy with a crispy, un-greasy coating.
It came with a nice little mixed-greens salad, and also a wakame seaweed salad that had an unusual amount of chili-flake heat to it.

NOAA Fisheries has invited each Gulf state to apply for an Exempted Fishing Permit (EFP) to participate in the pilot program opportunity. EFPs are federal permits that allow harvest for certain purposes that otherwise would not be allowed under federal regulations. All five Gulf states are developing EFP proposals that would allow them to implement this pilot program in federal waters off their state. It is possible that these EFPs could be the mechanism under which the 2018 federal private recreational season occurs. Each state proposal will be subject to approval by NOAA Fisheries, but will be reviewed by the Council at its January meeting. Staff requests direction on the draft Florida EFP proposal, which could be used to set the federal and state private recreational seasons off Florida for 2018 and potentially 2019.
