I know it doesn't look like much but WOW this was good! I covered a large slab of pork with Mojo Criollo sauce in my slow cooker. It didn't take all that much sauce since the pork took up all the space in the cooker. After about 4 hours I took the pork out of the cooker and the meat was so incredibly tender. And the flavor it had! WOW.
The lentils were cooked with more spices than I can remember.

I had a huge headache and wanted something easy, so grabbed a bunch of basic chili ingredients from a grocery store and set it to cook in the crockpot. It turned out amazing - a nice sweet chili. :)
- 1.25 lbs of extra lean ground beef, browned
- 1 cup frozen diced onion
- 1 can red kidney beans, drained & rinsed
- 1 can white kidney beans, drained & rinsed
- 1 can black beans, drained & rinsed
- 1 can low-fat refried beans
- 1 can green chili peppers
- 2 jars no-name brand chili sauce
- 4-6 cloves garlic, minced
- 1 can pieces & stems mushrooms, drained
- 2 tbsp homemade salt-free taco seasoning
- 2 tbsp chipotle bbq seasoning
Dump all ingredients into 5.5 quart slow cooker. Cook on high for 4 hours.
I can't find my last recipe for slow-cooker pot roast. Every time I use this thing, it's an experiment. ... hopefully it's worth it.
Browning the roast in my pyjamas this morning was kind-of fun, though.

Today a delicious blend of beef and several vegetables simmered whilst we were at church,and was ready for a delightful Sunday dinner when we returned..
You can call it cajeta or dulce de leche or arequipe. To me, this is simply caramel heaven in a jar.
Cajeta made entirely from scratch by reducing organic goat milk, sugar, cinnamon, salt, baking soda from 2L to 600mL. I had a head start using slow cooker to handle much of the reduction (hands off) before finishing off the last hour of cooking on the stove to achieve thick caramel perfection.

My first batch of beef stew made via slow cooker. I was baffled by how much water the vegetables produce. You don't add that much to begin with, but so much just APPEARS the next morning!
I used this recipe: allrecipes.com/Recipe/Slow-Cooker-Beef-Stew-IV/Detail.aspx with a few variations. Next time I'll use less beef.

nice and tender osso bucco. I should have picked the a nice piece marbled with gelatinous tendon for the photo
It's starting to cool a bit and time to bring out the crockpot. This is an original dish for two.
