a very thick, intense, spicey, pineapple butter/jam cooked in the slowcooker. it's not as smooth as the plum butter flic.kr/p/2p1Kik1 which is what i was hoping for but very flavoursome and thick. i'll be using to garnish any meal, sweet or savoury

The white eggs develop a delicious smokey flavor and a brown color when slow-cooked in a pot of soup or a cholent overnight.

One egg broke while cooking. I imagine I hit it with a ladle as I stirred it every so often. That is a rare accidental event.

I broke the shell on the egg on the left and started to peel it before I decided to capture this shot.

my first attempt doesn't look great in this photo but tasted spicy and flavoursome. the remainder has been boxed and placed in the freezer. would definitely make again, delicious

lamb curry was cooked in the slowcooker a while ago and boxed for the freezer. this was a portion, reheated in the centre of a deep frying pan surrounded by sliced fresh fruit and vegetables that cooked in the steam

cooking the mixture was convoluted. i wrapped the sausage meat in foil and placed in the slowcooker on low but even after a few hours it wasn't cooked

 

next removed from the slowcooker, unwrapped the foil and decanted the meat into a deep metal dish covering with foil - the ingredients had reduced so could fit in easily. finally placed in the counter top mini oven on 170 fah until cooked - should have done that in the first place :)

I've just put the ingredients for this week's 'house sauce' in the slow cooker. I have a feeling it will be a cure for almost anything; there are the usual suspects (soffritto) as well as olives, tomatoes, 3 kinds of peppers, and a small marrow. A friend gave me a bag of aglione spice mix so I added some of that, too. Covered with a glass of red wine and stock.

I'm looking forward to how the kitchen will smell in the morning.

I bought another slow cooker yesterday for the cost of a flat white. This one is only 1 liter and so neat.

I made a sauce/soup overnight:

Onion

Celery

Garlic

Dried herbs

Carrot

Blackeyed beans

Red capsicum

Tomato puree

Bacon

Veggie stock

 

Cook on low for 6 hours

To make the product a bit more versatile I blitzed with a stick blender.

 

Top tip ... stop the blender before lifting out of the pot. It looks like a crime scene here!

*i bought an old fashioned meat grinder 'spong 25' for £7 from an antique and collectables shop. www.ebay.co.uk/itm/334464667774?chn=ps&norover=1&... i happened to see the red handle sticking out from a box, took a look and knew it was exactly what i needed for the next recipe. once home i took it apart, cleaned it up, put it back together and attached it to my work surface ready for mincing

 

method

i put the lean pork and pork fat through the meat grinder*

 

i put the minced lean pork in a food processor with salt

blended until smooth (see video recipe above)

chicken liver added (this had not been minced)

blended until smooth (see video recipe above)

minced pork fat added

lean pork, pork fat and chicken liver all blended until smooth (see video recipe above)

added the diced uncooked onion

(add uncooked onion and the liverwurst/pate will be light in colour add cooked onion and the liverwurst/pate will be dark in colour)

added the herbs and spices

all blended until smooth (see video recipe above)

placed the bowl of blended meat, fat, onion, herbs and spices in the fridge to rest and become more flavoursome

 

removed the blended ingredients from the fridge and spooned into the **muslin pouch, pushing down towards the point of the pouch leaving no air pockets.

when all the blended ingredients were in the pouch i tied it tightly at the top

 

i placed the full pouch in the slow cooker and covered with water

(i used cold water but to save on cooking time i should have begun with hot water)

'low' setting

cooked for 6 hours

i removed the pouch of cooked meat from the slowcooker and

allowed the cooked meat to rest overnight

 

this morning i spooned the liverwurst/pate into jars, pressing down using a teaspoon to make sure there were no air pockets

warm butter poured over the top to seal

when the butter had cooled and set the jars were closed and placed in the fridge

Corn tortilla, sweet corn puree, seven hour slow braise beef rib, minced white onion, diced cherry tomato, chiffonade of romaine, fresh lime burst.

Slow cooked lamb with harissa, raisins and figs. Served with pita bread, cucumber laban (garlic/mint yogurt sauce) and the liquified raisins and figs as a gravy.

Diced onion, garlic and shallot sautéed in olive oil; diced celery, fennel, cauliflower, potato; seasoned with salt, freshly ground black pepper, Maggi, a dash of curry powder, a good dash of turmeric, BBQ seasoning powder, sumac, and 'Ozzie Outback seaoning' — very difficult to find. (Use spices of your choice: thyme, basil, oregano and the like.)

 

Add in a couple of medium-sized tomatoes, diced, and top with a big mushroom, sliced.

 

Cook for ±6-7 hours on 'low', purée with a stick blender.

 

All kinds of good stuff can be added: fresh herbs, toasted sesame seeds, cream....

What's better to warm those bones on a cold winter night than slow cooked lamb.

I was busy arranging a fussy smiley out of raisins and a banana when I looked to my left and the slow cooker was smiling at me like a metal Muppet.

So Von's had whole chickens on sale for 69 cents a pound so I got one, so good and so easy to cook!

 

What was used:

Slow cooker

One whole chicken

One large potato

Garlic cloves

One med Onion

Spices for dry rub

 

How it was cooked:

Cut the potato in half (length wise)

Lay the potatoes in the bottom of the crockpot like upside down boats (to keep the chicken from sitting in the water)

Add about a cup of water or stock.

Take the goodies out of the chickens cavity (you can throw them away but I just dump them in the crockpot water)

Add the dry rub to all the chicken (inside and out)

Set the chicken on the potatoes and turn on crockpot to high for 5-6 hours or on low for 8-9 hours.

 

About an hour before it's done, add the onions and any other spice (I added chipotle peppers and butter)
