Join us for charcoal spit slow roasted whole lamb rubbed with lemon, salt, dried oregano & paprika. Lacquered with marinade using fresh bunches of thyme & rosemary as a brush.

 

The influence of the marinade comes from the north-west of Spain, Castilla Y Leon, where they have a colourful tradition of roasting whole Beasts. The marinade (honey and red wine vinegar) is a regional specialty, used as a lacquer on the skin. We've also adopted Turkish and Greek flavours and spices for our lamb to compliment our famous Mediterranean menu items.

 

As Chef Ibrahim puts it, 'These flavours evoke the Turkish invasion of Spain' CHARGE!

Picked up a bag of Colombia Santa Rio at The League of Honest Coffee today. First time I buy beans from Padre and I've got to say, it's good stuff! Super fresh, roasted yesterday, I swear I stuck my head in the bag for a solid minute and took deep breath of coffee vapours.

So after a few Aeropress I realized that I actually don't really like the Coffee it makes. I think I'm doing it right (double checked on the awesome Brew Methods website) and I find the cup is lacking body and richness. Sure it feels really clean & smooth but almost a little too clean for my taste. I like my Coffee a tad 'heavier' so I had to move on to plan B.

 

The plastic funnel that comes with the Aeropress is actually a pretty good substitute to the V60. It's not ideal and you have to be super careful while pouring but I finally got my rich, intense cup of coffee that I was craving since the 'accident'.

This is a single origin Guatemala Huehuetenango. Jordan and I got to talking about espresso, and I told him that I had no experience with single origins. Mad scientist Jordan started his production of the perfect first experience shot for me. He pulled 5 or 6 before he got it just right - making small adjustments to the exact quantity and granularity of coffee.

 

It was a very different taste experience. Very bright - strong tangerine/orange flavors, and then a kind of subtle finish. Wow! This is espresso? My mind has been officially blown. Love it!

 

Update on 9-4: Bought some Chupacabra beans for some @ home shots. Wow - I have to say that the Rocky and Silvia did a fine job in emulating my Wandering Goat experience, and that the Chupacabra was excellent. Less citrus than the Huehuetenango, and a bit smoother...
