The beautiful crema of the Pereira Single Estate coffee. It should look like liquid chocolate with a nice sheen in the bubbles as in this photo. This is the crema of the very first pourover in a Hario V60.
Proces:
- Clean filter with 95°C water, pour out excess water
- Add 10 to 12 grams of ground coffee
- Add 30ml (one single covering amount) of water on the first pour, let it bubble and degas
- Pour on the remaining 180ml of water in a clockwise motion, prefereably within 2 minutes.
- Drink!

OC is normally far away from being hipster, but not the case in OC Mix, Costa Mesa.
Many hispter shop/place in OC Mix, Portola Coffee Lab is one of them.
In SF and LA, the coffee shops are blooming, open here and there.
But down in OC Irvine area, there's not much, Portola coffee lab is one of the most popular 3rd wave coffee shop, especially in a Saturday afternoon, long line of people ordering for coffee.

(although the cappuccino "fern" is now a logo for Campo's, one of the other "best" coffee shops in Sydney)

Haiti Grand Cru de Beaumont, single origin, house-roasted coffee AUD3.50
Smooth and fragrant with nary a hint of bitterness or acidity. Very good!

Antipasto is hardly groundbreaking but this "gourmet Bunnings" with a cafe-restaurant, cheese room, bakery, pizzeria, cellar door and coffee roaster makes most of its produce in-house or sources it locally. Choose a selection of goodies for your plate: organic sourdough grissini, house-cured Buxton salmon, mushroom arancini, thinly sliced zucchini wrapped around ricotta on pickled beetroot or some mammoth green olives.
