Wow, I completely messed up this coffee. The vacuum brewing process went awry. Grind flowed back into the water and got cooked. Boiling water and ground coffee will make your coffee go acidic and bitter. Not a good thing. So I'm giving this Harrar the benefit of the doubt. Harrar should taste winelike, dark and thick with a hint of (blue)berries. Certainly didn't taste that this morning! Beans from a new store "Harrar Coffee" in the 2de Hugo de Grootstraat in Amsterdam.
Harrar coffee got the nickname: King of Coffee.
Coffee Experiment. This is Gorilla Coffee Kenya Fairview Estate poured with 4 different variables. Grind, filter, and weight were tested. Participants preferred:
Hario V60 dripper 20 grams of coffee and Chemex with Kone over Chemex with paper filter.
Participants were customers and barista.

119.2'c, cappuccino = Jelly (fruit), honey--honeysuckle, bold cinnamon/currant, dark chocolate, raspberry, low body, smooth texture--silky.
So I was concerned that the strong citrus flavors in the single origin that Jordan showed me would be too strong for milk based drinks.
He showed me a macchiato and then a latte to demonstrate what I should expect.
Again, with the single origin, a very different taste - the flavors were not overwhelming, as I was afraid of. It has a profound impact on the drink, as you'd expect, but in a really good way. He explained that a single origin is less prone to minor changes in your brewing process too. As Silvia owners know, temperature surfing can introduce minor differences each time you pull a shot...
I bought some single origin to experiment with at home.

Grabbing some single origin on split at @elmcoffeeroasters while at my stop-over in Seattle en route to @official_gdc.

This coffee is an heirloom varietal grown on the farms of the Kochere co-op in the Gedeo Zone in Ethiopia at 2km above sea level.

Straight, it has a really pleasant sharpness, leads with a strong pineapple note, and finishes with faint notes of apple with a lingering viscous feeling tea note. Medium body. Tart and fun. Really clean.

Not as fun in a macc. Good, nice acidity, but the flavour profile really lends it to straight esprssso. Still very good, a very Seattle flavour profile.
