This is my attempt to replicate almost identical dish I had at Casa Mono in NYC.
This version shows marginal improvement - I prefer texture of flash-cooked octopus over sous-vide on this plate. Still, advantage "Casa Mono" - they just do it better.

Somehow crab and shrimp will make an appearance at any big family gathering and in recent years, my mom's been making curry. Drool.
The only part that is edible is the small strip in the middle, so these are definitely not worth all of the work.
Tsukiji Fish Market.
Japan's most famous fish market doesn't operate on Sundays. So I didn't watch the fish auction (in any case, I was there way too late for the auction). But many of the little shops around the market are open. So we went around, sampling the dishes. It was a good morning!
The market is shifting at the end of the year, so I'm glad for the opportunity to visit.
