Wild swedish raspberries are a true delight. In the summer of 2007 the clear-felled areas of Värmland, in the middle of Sweden, was overflowing with the soursweet little berries. I picked 1,5 liters in just two hours before the flies and vipers had me running back to our summerhome.
A vanilla cupcake, filled with raspberry conserve and topped with raspberry buttercream. I was just trying out some different ideas for gifts for teachers - as Grace is finishing Year 11, I wanted to give the teachers something nice.
This one sitting beside one of the little china dishes I bought to put them in before boxing them up.
I used some red glitter dust on this cuppie too - although looking at the photos it looks too "red" - it looks OK in "real life" LOL.
This came out only ok. Texture isn't quite right. Probably need to use gelatine or to make it higher in fat.
Ingredients:
2 C + 2 tbs vanilla yogurt (naturally sweetened, full fat, Brown Cow brand)
1 C heavy cream
5 oz powdered sugar
juice of 1/3 lemon
12 oz frozen raspberries
Directions: puree, strain, chill, freeze, eat.

Our friend Dave has a bumper crop of raspberries this year, and invited us over for picking yesterday afternoon.
We picked about five quarts in no time at all. Sadly, by this morning, there was widespread mold in the flat (damn you, record rainfall!). I sorted through, froze some for James' winemaking and made a raspberry-almond crumb cake.
The rest I turned into raspberry jelly for jelly roll cakes.

Lessons: Fruits and Veggies are hard to find perfect. One must look closely at the subject while arranging and try to arrange to hide imperfections for that perfect shot.
