OK, so it started out as an evening get away to a luxury hotel and stuffing ourselves with bivalves...with 3 sick tykes it turned into a night in the kitchen and some alchemy. . .the result? Scrumptious! Not sure whether it was the celery seeds and the mustard in the cole slaw, the molasses and vinegar in the sauce, or the rub with the cumin and ancho. . .but it rocked! ta da!

About 2.5 hours into the smoke. Now it is time to put in the internal thermo and wait until it hits 185. You can see the nice bark is starting to form on the outside. That is the smoke flavor.
It's an adjustment for a KC barbecue fan, but I do like the vinegar sauce on smoked pork that you find down south. Here's my version of the recipe.

Description was pulled off Red Hot & Blue's website: juicy burger piled high with pulled pork BBQ, spicy onion rings, melted cheddar cheese and Mojo Mild BBQ Sauce. Served with Memphis fries.
Now I'm sure this may not be authentic, but it was amazing! However, I couldn't really put much of a dent in it...lol
I pulled the pork, ate a sandwich and then unexpected extraneous circumstances consumed a large amount of my time. During that time, the pork sat out too long, so this lovely pan of pulled pork went into the trash. Better safe than sorry.

Food??? I'll watch it for ya! Note the water on the deck. It rained in Louisville on the 4th, which is why we waited until the 5th to smoke the pork.
This sandwich put me in a food coma last night so I forgot to post. Slow cooked with own spice blend, A&W Rootbeer and Sweet Baby Ray's BBQ Sauce. Delicious!

These Cherry Coke Pulled Pork Sandwiches are crazy good. I think this is one of my best creations to date. The spiciness of the pork, with the sweetness of the Cherry Coke based barbecue sauce and the creamy goodness and crunch of the cole slaw makes an amazing combination.
