The pork shoulder after 2 hours of smoking.

Here's the boston butt before I started pulling. The cooked butt weighed in at 4 lb 4 oz. It was initially 6 lb 8 oz for a 35% reduction. The $2.50/lb raw would in effect become $3.85/lb cooked not counting charcoal, hickory, or rub costs.

A nice Pulled Pork "competition" between the Weber OTP including smokenator, WSM 57 (22,5inch) and the BGE XL.

 

Okay so not a real competition as there are always to manny variables; meat is always different, ed. Still a nice thing to do.

 

In the end we did notice some difference especially about the tenderness. The BGE XL came out a little on top and after it the WSM. Have to say the thermometer of the OTP wasn't calibrated well,... unfortunately during almost the complete session the dome temperature was about ~20 degrees higher.

 

Well,.. we had loads of fun making this Pulled Pork. Best thing loads of PP. ;-)

Shredded the pork with two forks, took all of 5 minutes. Easy.

Yen and an Italian hoagie posted on LUNCH

The pulled pork had a sauce that was too sweet for my tastes. The fries were soggy and uninteresting. The gravy was disappointing as well as I would have enjoyed a much more beefy flavour. Overall, I prefer NY Fries to this version. I'm sad to say that....but it's true. It's about 1lb of fries in all - about 1.3x the size of a poutine at NY Fries.
