from Torito used naturally raised pork from Blue Haven Farm to make mini pulled pork sandwiches. The bite sized burger was both fun to eat and quite popular with the folks.
Under my Mother's supervision, rubbing these two massive pork shoulders with my Mom's blend of spices while stuffing spanish olives in the meat for about an hour was soooo satisfying!

Hard Eight is pit-style bbq and while you may not find hours long lines like you would at other establishments, this is excellent food. I had brisket and pulled pork with a side of mac n' cheese and complimentary beans.

After a three hour drive and another three hour wait, seeing/smelling/tasting this culinary magic was well worth it. I ordered the pulled pork, both lean and moist brisket, and slaw. They have a BYOB policy, so I felt it appropriate to bring a locally produced Austin Eastciders Texas Honey cider (they also sell that there).

Rockin’ Ronnie Shewchuk, international barbecue champion and best selling cookbook author was cooking up a smokin’ all you can eat bbq at the Lobby Lounge and outdoor patio at the Fairmont Pacific Rim Hotel. The Tri Tip Beef, Pulled Pork Sandwiches, Baked Beans, Coleslaw and Potato Salad were all amazing...as was the grilled pineapple for dessert. This was without a doubt the best BBQ I have ever eaten. Ronnie was super friendly and took the time to chat a bit (and pose for a quick photo) even though there was a lot going on. I am so glad we managed to make it there for the last Sunday of this event.

Grilled and smoked by me...over charcoal and hickory wood chips with a sugar and spice rub I made up on the spot. I expected to have to finish it in the oven but the coals lasted long enough for me to avoid that.
I love pork...that's no secret if you know me. This was my very first attempt with slow cooking something like this. I must say I did pretty well for a beginner.
Great co-marketing, but I prefer their Dead Elephant Ale, of which I had one.

Now that I've had pulled pork, this is just never going to satisfy me. This reminds me of all that pseudo-BBQ crappola that people have been trying to put past me my whole life. No Siree, I'm not going to be fooled anymore. It's dry and not at all tender and fatty like pulled-pork ought'a be. The pancakes were nice and crisp and fluffy. The topping was overpowering and muffled the sweet tenderness and flavour of the pancakes though. It was an unsteady start to an otherwise good meal.
