Where? At the Pudding Club - of course!

This is for those of you who have never had banana pudding.

 

My recipe:

Layer vanilla wafers in the bottom of a bowl. Slice a banana into 1/4" rounds and place the slices evenly on top of the wafers. Mix a large box of vanilla pudding according to the package directions and pour 1/3 of it over the bananas. Add a layer of whipped topping. Repeat two more times.

 

My mom made the vanilla pudding from scratch but I never got the hang of that. It always came out lumpy so I use a packaged pudding mix.

.... my first tapioca pudding ever, in coconut cream topped with caramellized mango.... I have to admit, it is not bad at all. :)

It is now simmering away in a pot in a low oven - another 6 hours or so will do it.

 

I make a 3L Christmas pudding every year. Usually it is made well before this but getting the kitchen refurbished has got in the way a bit this year. It will taste great anyway!

Vanilla rice pudding with apple ginger & sultana compote.

 

Due in part I guess to working in a grocery store and in part to a love of food I always like to see the new lines in the store. Many months ago I noticed that Nestlé had introduced into their Plaistowe range, a 63% Cocoa Couverture. Well even not knowing how I would use it, I couldn't leave it on the shelf!

 

After many months of looking at recipes and thinking of ideas I finally found one that sounded just right and in fact it comes from Nestlé's own advertising for the couverture :)

 

Chocolate Puddings

170g good quality chocolate (eg Nestlé Cocoa Couverture!) plus extra for serving

140g butter (chopped into small pieces)

3 eggs

3 egg yolks (this means that meringues are coming soon)

100g caster sugar

2/3 cup (100g) plain flour (sifted)

 

If you are making these to follow dinner, I would not turn the oven to preheat until a short while before dinner so that you can put the puddings in the oven whilst you eat dinner.

 

Preheat the oven to 180°C and grease six dariole moulds. Break 30g of the chocolate into six pieces and set to the side.

Melt the remaining chocolate and the butter using your preferred method (I like using a double boiler). Whilst the chocolate and butter is melting, beat the eggs, egg yolks and sugar. When the chocolate and butter is melted, remove from the heat and stir until it is smooth, allowing it to cool slightly.

 

Add the flour and chocolate mixture to the sugar mixture and stir well. Pour into the dariole moulds and into each mould push in one of the pieces of chocolate reserved at the start. Cook for 10 minutes or so. When cooked allow to stand in the moulds for 1 or 2 minutes during which you can melt the extra chocolate to serve with the puddings.

 

These were so yummy! Speaking of yummy I think I need to think of better words to describe food with other than just yummy :) These were rich, decadent and full of chocolate :)

We walked down to Glen Canyon Park on Saturday so Pudding and Umi could go hiking. They spent most of the time sitting on a log talking, but that's OK. This is a very pretty park in the canyon near where we live - we need to do this more often!

The Cantonese phrase dim sum (點心) means literally "touch the heart" or "order to your heart's content". It may be derived from yat dim sum yi (一點心意), meaning "a little token". ("A Touch of Heart" is perhaps the more poetic translation.) Though the English word "dim sum" refers to the Cantonese variety, the idea of a wide variety of small dishes for lunch also holds for other regions of China (I love wikipedia).

Screen Doors and Sweet Tea by Martha Hall Foose has recently become my favorite cookbook. Not only is it great fun to read, with all sorts of stories, tips, and asides, but the recipes are outstanding. Last night I made her Banana Pudding with great results. Here's the recipe.
