Light and airy lemon souffle cake baked till golden on top and dusted with confectioners' sugar; at the bottom of the cake lies a warm custard-like creamy lemon pudding. The combination of soft, crisp, sweet, tart, fluffy and creamy is just perfect.

Diospyros nigra, the black sapote, is a species of persimmon. Common names include chocolate pudding fruit, black soapapple and (in Spanish) zapote prieto. The tropical fruit tree is native to Mexico, Central America, and Colombia.[1] The common name sapote refers to any soft, edible fruit. Black sapote is not related to white sapote nor mamey sapote. Pudding Stone;
This sculpture was discovered during excavations on site in the approximate position of the roundabout (no longer there) in front of the main entrance. It is natural stone formed about 45 million years ago by melting glaciers creating a silica cemented pebble bed. It is believed to be one of the largest natural stones found in the south of the British Isles called “Conglomerate” but commonly known as a Pudding Stone.

EDIT: This one won the assignment!!
Mmmmm, pudding.... Shot for the "Food Photography" Weekly Assignment at DPS.
I told my wife I had to shoot another photo for the assignment. "Ah, and what do I have to do NOW?" she replied. So she was surprised that she could sit back and relax this time.
I'm by no means a confectioner . So I really had to discover some hidden artistic talents to overcome this assignmet. I thought about red/green and just started putting things together. The result: Almond pudding with raspberry topping. It tasted wonderful!
Shot with one shoot-through umbrella on both camera right and left using i-TTL.
Second of the mango shots for SilkAir's inflight magazine SilkWind.
I am so busy this week I didn't have time to make a real mango pudding so I just pureed it and threw some mango cubes on top. I also wanted to scatter some frangipane flowers around it but it's been raining cats and dogs so I couldn't go out looking for a frangipane tree =o(
One more photo shoot today then I gotta pack for Cambodia!!
