A tradition in my family. This is a British style pudding cake made with mostly vegetables like Carrot. Sweetened with sugar and topped with lemon sauce. Thanks Mom for making the wonderful pudding, I love it!
Ingredients:
1 cup Brown Sugar
1 cup Raisins
1 cup Dates
1 cup Currants
1 cup Margarine* (scant — just under 1 cup)
1 cup Shredded Carrot
1 cup Grated Potato
1 1/4 cups Flour
1 tsp Baking Soda
1 pinch Salt

My first attempt at bread pudding came out rather well I thought. I've only ever had bread pudding once before and never quite understood why so many people liked it so much.
However, a loaf of Warburton's Orange Fruit Loaf was reduced to about £0.40 so I thought I'll try making it myself. Rather than following any particular recipe, I mixed and matched a few - added a few bananas, which I had sitting around. I was nicely surprised by the result. Not at all stodgy or dry. I could smell lovely cinnamon, vanilla and banana as it was cooking.

When I was little, I hated pie, so every Thanksgiving morning while I watched the parade on TV, my mom would make some chocolate pudding to take to dinner just for me.
We had watched a Food show that had rice pudding in it a while back and happened to have some leftover brown rice. A perfect opportunity to try rice pudding!

I added at least an extra 1/4 cup milk to compensate for the drier brown rice, decreased the sugar by about 1/3, omitted the raisins and melted in about 2/3 cup chocolate chips before adding the butter and vanilla.
Mise en place rice pudding ingredients. Ingredients are wooden bowl of cooked white rice with turmeric, black pan of semi-skimmed milk, black bowl of pudding powder and glass bowl of coconut blossom sugar. Bluish background.
With homemade butter pecan ice cream and _____-maple syrup. (I forget the syrup).
As someone who absolutely loves bread pudding, I'll tell you this: best bread pudding IN THE WORLD. I'll never be able to have bread pudding again.
