Cappuccino Soffle Pudding
From book: Everyday Chocolate
Serving size: 2
1. lightly grease the ramekins with butter and coat with superfine powder
2. mix 3 tbsp whipping cream + 1 tsp instant coffee + 1tbsp Kahlua(I used Rum instead.) heat few secs in microwave to help coffee dissolve --> 分裝到2個杯子 (圖片3個錯誤,量不夠)
3. 隔水加熱,溶解半甜咖啡豆 melt 75g semisweet chocolate,放冷卻
4. whisk 2 egg white until soft peaks form, then add 1 tbsp powder sugar. keep whisking until stiff but not dry.
5. Stir 2 egg yolks with melted chocolate --> then fold in a little of egg whites --> then gradually fold in the remaining egg white. 分裝到2個杯中
6. bake in a preheated 375F/190C for 15mins, or until just set.
We had dragon fruit for our pudding tonight. I saw them in Tesco and thought they were awfully pretty. It looked better than it tasted though, we didn't dislike it but there wasn't much taste to it. James gobbled it up though, he loved it!

Stuff always tastes better on the trial. Pudding is no exception. This is a nice mess free way to make and eat it. However you do have to be a little careful with the hole in the end of the bag when sharing (only with family of course) as you can get dripped on. :)
We learned that there was a good view of the Olympic site from Pudding Mill Lane Station (I kid you not) on the docklands Light Railway.
