1st attempt at a real pudding.
The original of this photo was used to be on Wikipedia, but the page seems to have been removed.
Recipe modified from a magazine recipe. Took the picture before we tried it. It was excellent!
2 boxes Cook and Serve Vanilla pudding and pie filling (you can use sugar free!)
1 Quart Whole Milk
1 box Croissants from a Deli
1 Tablespoon Brown Sugar (you can also use Splenda Brown Sugar)
- Preheat oven to 350 degrees
- Whisk pudding mix and milk until well blended
- Cut croissants into 1 inch pieces. Arrange in 3 quart casserole dish. Pour pudding mixture over croissants, pushing pieces into the mixture.
- Sprinkle top with brown sugar.
- Bake on middle rack of over for 50 minutes, or until topping is brown and pudding is bubbly.
- Let cool for 10 minutes before serving.
After the gelatin has absorbed the water, place the bowl in a warm water bath. Vigorously stir the mixture as it melts.

Some bread pudding we bought yesterday. I was happy that there was no detectable alcohol. It was quite tasty.
(My primary computer is down with diagnostics and I'm using a secondary (and slower) computer - the programs I normally use aren't on this computer and my workflow is messed up - oh, dear! How dreadful!)
You might all be pleased to hear that Wodehouse went back to the vet today, and has had the cone removed. He was given some more antibiotics and pain relief by injection, and I was sent off with another 10 days worth of antibiotic tablets for him. The infection is still there, but greatly reduced, and he is going to be absolutely fine. The best news, as far as he is concerned, is that I don't have to take him back to the vet again, unless I have some concerns. He has done so well. :)
