X Mass can be a lonely time if you live in another country and can't be with your family. So Adam makes sure we always have a wonderful time and a feast. Although I cheated and bought the pudding I decorated it myself, covering it in lime and lemon zest infused cream and soaked in brandy. Yummm...
The recipe described this as a cake, but fundamentally it was a cooked pudding with some meringue folded in, turned into a pan and baked. I put it in an 8-inch square when it was supposed to be 9, and it never quite firmed up. Maybe I should have cooked the pudding longer first.
At any rate, the aesthetics suffered as a result but it still tasted pretty divine. Cardamom-Semolina pudding with toasted sesame seeds on top, drizzled with a thick, cold basic rosewater syrup (sugar/water/lemon juice/rose flower water.)
I'd like to make it again and actually cook it into a cake (it's supposed to be cut into diamonds and served as finger food) because I bet it'd still have the moistness and eggy loft. Mmm.
Jordi tried to recreate a sillicon waffer just using cooking ingredients. The result was an amazing almond pudding and the first prize of the photo contest his lecturer holds every week. He's so originally smart.

Joe's Bread Pudding
Fill a buttered baking dish with cubed bread that's past its prime.
Sprinkle the bread with about 1/4 c raisins, 1 tsp cinnamon, and 1/4 tsp nutmeg.
In a bowl, combine the following:
4 eggs, beaten
2 c milk (we used reconstituted powder)
2/3 c brown sugar
1 tsp vanilla
Pour the bowl's mixture over the bread and smush the bread down.
Bake at 350 F for 45 minutes. Should be firm, not soggy.
