Two plump scallops, one wrapped in crackling prosciutto, anchor a composition built more like abstract art than a conventional entrée: a pale purée swept across a hammered slate plate, dehydrated mushroom slices fanned out in warm oranges and browns, a shard of crisp tuile standing upright for height, and a scatter of microgreens and black crumble adding bitterness and texture against the richness of the seared shellfish. This is contemporary tasting-menu plating at its most legible, negative space treated as a design element, sauce painted rather than pooled, protein positioned off-center to keep the eye moving around the plate instead of settling on a single focal point. Shot straight down under low restaurant lighting, the terrazzo tabletop peeking in at the edges places this squarely in a specific genre of Vancouver fine dining, the kind of kitchen that treats a course as a small still life meant to be photographed before it's eaten. The scallop itself gets the classic hard sear, caramelized edges giving way to a translucent, barely-cooked center, proof that at this level of cooking restraint is the technique.
