This is is the plate I made for myself. I made the gravy from the pan drippings. First I skimmed the fat off and reserved it, but leaving a few tablespoons of it behind. Adding a little flour, I made a roux then poured some white wine and let it bubble and thicken. Once off the heat I stirred in some butter then strained it.
