Sorry, missed a couple of days. And a couple of lunches. Today, Whole Foods salad bar: mixed greens, cucumbers, red onion, pico de gallo, shredded cheddar, orzo aspargus salad, baked tofu, green peppers.
Today the local evangelical church was selling food to raise money. As you may recall from the photo on day 17, they are working to finish up construction on the new church building. Later this week they will be putting the tile on the floor.
For two dollars, I bought a plate that included salad, pico de gallo, rice, steak, and horchata (a drink made from toasted rice and spices).
Perfectly grilled chicken breast, fresh asparagus, and pico de gallo covered in a creamy alfredo sauce, straight from the Rada Cutlery kitchen.

I am not a huge fan of pico de gallo because I abhor raw onions. But I made a super fresh version last night with both red and yellow tomatoes and a mellower sweet red onion and we all quite enjoyed it. I let people add their own hot sauce. The green stuff = instant tears. The Mayan recipe El Yucateco = instant death. Mmmmm.
Also, if you see crema Mexicana at your local store do NOT buy it under any circumstances. It is the most insanely delicious and addicting stuff on earth. Someone who tried it for the first time last night admitted that they wanted to drink the whole bottle.
You're done! Now its time to enjoy. The best part of this recipe is that Pico de Gallo tastes good on pretty much everything. Add it to your eggs, put it in a taco, add it to nachos or simply eat it with chips. Crunchy tortilla chips are the best kind of chips to use for dipping. My favorite are Casa Sanchez, but any kind will do.

Onions make you cry, but without them there would be no salsa. The easiest way to chop the onion is to cut it in half then make slices width wise then lengthwise. You can chop the onion into big chunks or chop them into small chunks, the choice is yours. I chose to make them small as I didn't want the onions to overpower the tomatoes.
Step 3: Chop Onion then combine chunks to the mixture of diced tomatoes.

An important step in the recipe is collecting the juices from the tomatoes. The juice makes the salsa juicy and adds a lot of flavor. It also helps to mask the spiciness of the serranos ( we will get to those soon).
Step 2: After each tomato is chopped, scrape the left over juices into the bowl or Tupperware where the salsa will be combined later.
