Surprisingly awesome nachos from of all places Denny's. I love nachos and these are in my top five favorites.

We purchased some ingredients from Tienda Hispana Martina (our local Hispanic grocery). Then we purchased a Pork Roast from Kroger and slow-braised the Roast in our Dutch oven. Then we had Pork Tacos for many days!

I have this thing for fish tacos... It's kind of like a signature food for me. They are easy, healthy, and just flat out tasty. Ive had many great fish taco moments since I learned how to make them. I posted a pic of them before, but this time I tried it with mango salsa.

 

Traditionally, a fish taco recipe calls for cabbage, but I used romaine this time. The fish is breaded cod. I used a chipolte ranch sauce to add a little bit of creamy kick to it.

So I had a leftover pork chop, had some prepared pico de gallo, small flower tortillas and the spouts, doesn't sound nearly as good as it tasted, believe you me! :-)

We went to our local Taco Bell this afternoon and got:

 

4x - Grilled Cheese Burritos

2x - Nachos BellGrande (with Pico de Gallo)

2x - Lemonade Strawberry Squeeze drinks

The 'El Guapo" juicy Lucy from The Blue Door is one of my favorites. It is stuffed with queso and taco sauce, and topped with lettuce, pico de gallo and avocado sour cream.

Homemade Baja Fish Tacos with Mango Salsa and Chips

Flor de Erythrina crista-galli, árbol llamado comúnmente ceibo, seibo o bucaré. También se conoce con otros nombres como árbol del coral, flor de coral, cresta de gallo, pico de gallo, gallito, sananduva. Es el árbol y flor nacional de Argentina y Uruguay.

This was huge! A 3-egg bacon and jack cheese omelet plus hash browns inside an extra large flour tortilla that is then pressed on a panini grill. Needless to say, 3/4 came home in a doggie bag and I am still working on the leftovers.

My dinner tonight. Pork tamale with Mexican crema and pico de gallo. Yum!

Feliz QUINTA-FLOWER !!!

 

Erythrina crista-galli es la Flor Nacional de Argentina y de Uruguay, su nombre alude en latín a "cresta de gallo", con esas curiosas formas y ese potentisimo rojo sangre.

 

En castellano se la conoce como Ceibo o Seibo y en inglés como Cockspur coral (espolón de gallo rojo)

 

Es un árbol de unos 10 mts. de altura, pero que puede llegar a alcanzar los 20 mts., con ramas llenas de punzantes espinas, que desaparecen trás su floración.

 

Sus raíces son de gran resistencia tanto a las heladas como al fuego, el Ceibo siempre rebrota, se autoreproduce espontáneamente por semilla.

 

Sus flores de curiosa simetria bilateral son de un intenso carmesí.

 

Esta planta, en forma de semillas, se la trajo a mi madre un pariente de Argentina, hace ya la friolera de 30 años y se ha convertido en un hermoso árbol .....ya he intentado varias veces que me prendan porque me encanta este arbusto, pero no tengo mano.
